STEP 1
How to make a lush kefir pie in the oven? Prepare your food. In order for the cake to rise well and be fluffy, the ingredients must be at room temperature. Therefore, remove kefir and eggs from the refrigerator in advance. But even if you didn’t have time to do this, it doesn’t matter - dip the eggs in warm water and heat the kefir over low heat.
STEP 2
Take a bowl and beat the eggs into it. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Start beating the eggs at low mixer speed, then increase the speed and add sugar in portions. Beat eggs with sugar until fluffy and light.
STEP 3
Pour kefir and odorless vegetable oil into the mixture. Stir everything with a mixer.
STEP 4
Sift the flour into a separate bowl. Add baking powder, salt and vanillin to it. Stir dry ingredients.
STEP 5
Pour the dry mixture into the egg mixture. Again, mix the ingredients with a mixer at low speed until smooth. The dough is ready.
STEP 6
For the filling, wash and dry the apples. Cut each into quarters and cut out the center with the seeds. Then cut the apple quarters into thin slices.
STEP 7
Take a suitable baking dish. I took a square glass one, size 20*20cm. To make it easier to remove the cake from the pan, line the bottom and sides with parchment. If you bake without paper, grease the pan with oil. Pour the dough into it and smooth the top.
STEP 8
Place the apple slices on top of the pie, dipping them vertically into the batter. I got three rows. In principle, the pie can already be baked in this form, but it will be even tastier if you sprinkle it with streusel - shortbread crumbs - on top.
STEP 9
Grab your streusel ingredients. Remove the butter from the refrigerator; it should be cold. You don't have to add cinnamon, depending on your taste. How to make streusel? Place flour, sugar and cinnamon in a bowl. Add butter, cut into pieces. Grind everything with your hands until it becomes sandy crumbs.
STEP 10
Sprinkle the streusel over the top of the pie.
STEP 11
Bake the pie in the oven, preheated to 180°C (top-bottom mode, no convection), for 40 to 50 minutes. The exact time will depend on your oven and pan size. The pie should be browned. Check readiness with a wooden skewer - it will come out dry from the middle.
STEP 12
Remove the finished pie from the oven, cool and carefully remove, holding it by the paper. Cut it into portions and serve. Bon appetit!
