Beat the eggs into a bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Pour milk into the eggs, whisk everything together with a whisk.

Add cottage cheese, stir again.

Add dry ingredients - flour, salt and pepper. Stir and add grated cheese. Mix it into the dough. It should turn out viscous, like pancakes. If the dough is runny, add a little more flour.
STEP 6

Heat a frying pan over medium heat, preferably one with a non-stick coating and a thick bottom. Lubricate it with a small amount of vegetable oil. Pour the dough into the pan, cover with a lid, and reduce the heat.
STEP 7

Fry the khachapuri until golden brown, then use the lid to turn it over to the other side. Fry the khachapuri also under the lid until done.
