First of all, look at the manufacturing date on the packaging. Do not take expired baked goods. Fresh pita bread should have a pleasant smell. Look carefully to make sure there are no stains or signs of mold.

    Hard cheese can be any kind. The main thing is that it is tasty, fresh and aromatic. Grate it on a coarse grater. You can replace hard cheese with processed cheese like “Druzhba”. To make it more convenient to rub, keep it in the freezer for 15-20 minutes.

    Wash the eggs well. Boil hard (about 8-10 minutes after boiling). Drain the hot water and add cold water. When the eggs have cooled, remove them and peel them. Also grate coarsely.

I had a fairly large sheet of pita bread, so I increased the amount of eggs. I first boiled them until tender and cooled them in cold water. The cheese I chose was delicious - that’s important. I grated the eggs and cheese on a coarse grater. For the sauce, I mixed mayonnaise with chopped green onions. The onion adds some piquancy to this delicate roll. I don’t recommend replacing mayonnaise with sour cream; it can make the pita bread soggy. I sometimes grease the pita bread with melted cheese. The roll was soaked in my refrigerator for about an hour, wrapped in cling film. It cut well; I find it more convenient to use a serrated knife for this. Lavash with cheese and egg is delicious!
