  1. STEP 1

    STEP 1

How to make a quick kurnik in the oven with chicken and potatoes? First, prepare the necessary ingredients according to the list. You can take kefir of any fat content. I have 2.5%.

  2. STEP 2

    STEP 2

    Melt the butter and cool.

  3. STEP 3

    STEP 3

In a bowl, combine room temperature kefir, soda, salt and mix. The kefir will begin to foam strongly and air bubbles will appear. Due to the fact that after adding soda, the mass increases in volume by 2-3 times, the dishes must be selected taking this moment into account.

  4. STEP 4

    STEP 4

Pour melted butter into kefir and stir quickly. The dough must be kneaded quickly until the reaction of soda with kefir is complete.

  5. STEP 5

    STEP 5

Sift the flour and add it into the dough in parts. If necessary, adding a little more flour little by little, knead a soft, elastic, slightly sticky dough. Depending on the quality of the flour itself, the moisture content of the kefir, you may need more or less flour.

  6. STEP 6

    STEP 6

Therefore, focus primarily on the consistency of the dough. And don't rush to over-flour the dough, otherwise it will become tough.

  7. STEP 7

    STEP 7

Wrap the dough in cling film or a bag and put it in the freezer for 30 minutes.

  8. STEP 8

    STEP 8

While the dough is cooling, prepare the filling. You can add herbs to the filling to taste and 1-2 chopped garlic cloves. In addition to these spices, you can add your own to taste. A similar pie can be prepared from any other types of meat - pork, beef or turkey.

  9. STEP 9

    STEP 9

Wash the chicken fillet, dry it, cut into small pieces.

  10. STEP 10

    STEP 10

Peel the potatoes and cut into small pieces. The smaller you cut the potatoes, the faster they will bake. The biggest problem with these pies is usually that the meat and dough are cooked through, but the potatoes remain soggy. Especially if you chose potatoes with a small amount of starch. The situation can be corrected by fine cutting. You can also pre-boil the potatoes until half cooked, and then cut them into pieces.

  11. STEP 11

    STEP 11

Peel the onion and cut into small cubes. If you or your children don't like onions in pies, you can omit them altogether.

  12. STEP 12

    STEP 12

Combine chicken, potatoes and onions in a bowl.

  13. STEP 13

    STEP 13

    Salt, pepper and mix everything.

  14. STEP 14

    STEP 14

Separate a quarter of the chilled dough and set aside. Roll out most of the dough on a floured table into an even circle.

  15. STEP 15

    STEP 15

Place the rolled out dough into a greased baking dish (Ø 20-24 cm) and form high sides.

  16. STEP 16

    STEP 16

Place the filling on the dough and smooth it out. Place pieces of butter on top of the filling.

  17. STEP 17

    STEP 17

Roll out the remaining dough into a circle with a diameter slightly smaller than the springform pan. Place it on top of the filling and pinch the edges.

  18. STEP 18

    STEP 18

Make a small hole in the center of the cake to allow steam to escape. If you have some dough left, you can use it to decorate the pie - leaves, flowers, etc.

  19. STEP 19

    STEP 19

Now prepare everything to grease the surface of the pie.

  20. STEP 20

    STEP 20

Combine the yolk with water and beat with a fork until smooth.

  21. STEP 21

    STEP 21

Brush the surface of the pie with beaten yolk. Bake the kurnik at 180°C for about 50-60 minutes until golden brown. If the pie has begun to crust, but the inside is not yet ready, cover it with a double sheet of foil. Bon appetit!

I’ve baked many different pies in my life, but I didn’t bother with kurnik, I was afraid that the filling would come out soggy. But someday you have to start) I chose a recipe for kurnik in the oven with chicken and potatoes on the website. I really liked that the dough for this pie was simple and made with kefir; there was no time to work with yeast. By the way, the dough turned out soft and manageable. After the freezer it rolled out easily and did not tear. After reading the comments about the potatoes, I decided not only to cut them smaller, but also to pour boiling water over them for 15 minutes. Then I washed the pieces and combined them with meat and onions. I baked it for about 45 minutes, by which time the chicken was golden brown and beautiful. The cut surprised me not only with the baked crumb, but also with the completely prepared filling. The dough is very similar to yeast dough, it is just as fluffy, porous and soft. The filling turned out juicy, but not soggy. Everyone liked the chicken, it was tasty and aromatic. Thanks for the recipe!
