  1. STEP 1

    STEP 1

How to make delicious crispy fried khachapuri from pita bread with cottage cheese and cheese in a frying pan? Very simple and fast! To begin, prepare the necessary ingredients according to the list. You can choose the type of cheese according to your taste. For example, replace regular cheese with mozzarella, suluguni or feta cheese. Instead of Armenian lavash, you can also use a wheat roll. Read about how to choose the right pita bread at the end of the recipe.

  2. STEP 2

    STEP 2

It’s best to start cooking with the filling. Place the cottage cheese in a bowl and mash with a fork. Any cottage cheese will do for the filling. When fried, even lumpy cottage cheese will become softer and more pliable. I have cottage cheese in briquettes. It is quite moist and juicy. Read about how to choose high-quality cottage cheese for filling in a separate article, link at the end of the recipe.

  3. STEP 3

    STEP 3

Grate the cheese on a coarse grater. I have regular Russian cheese.

  4. STEP 4

    STEP 4

Wash the parsley, dry it and finely chop it. If you wish, you can replace or supplement it with other herbs, for example, green onions, dill, cilantro, or use a mixture of different herbs.

  5. STEP 5

    STEP 5

Beat the egg with a fork until smooth.

  6. STEP 6

    STEP 6

Add cheese, herbs and vegetable oil to the cottage cheese. Season the filling with salt and pepper to taste and stir.

  7. STEP 7

    STEP 7

Cut the pita bread into strips 7-8 cm wide. I got 8 strips about 40 cm long. The pita bread dries very quickly, so the strips should be cut last, when the filling is already prepared. Before this, it is better to store the pita bread in a hermetically sealed bag. Place a little filling on the edge of each strip.

  8. STEP 8

    STEP 8

Roll the pita strips into triangles. In this case, all edges should be wrapped in pita bread, then the filling will not leak out of the envelope.

  9. STEP 9

    STEP 9

Brush the edges of the pita bread with beaten egg and form into triangles.

  10. STEP 10

    STEP 10

Form the rest of the khachapuri in the same way. If desired, you can make square or rectangular blanks.

  11. STEP 11

    STEP 11

Heat vegetable oil in a frying pan over low heat. There should be enough oil to cover the entire bottom of the pan. Read about how to choose the perfect frying pan, as well as how to choose the right vegetable oil, in separate articles, links at the end of the recipe. Place the lavash pieces and fry for 2-3 minutes on each side until golden brown.

  12. STEP 12

    STEP 12

Transfer the finished khachapuri to a plate and serve immediately. Bon appetit!

I wanted to cook something short and filling for breakfast. There was just lavash and cottage cheese left. I came across a recipe for “khachapuri from lavash with cottage cheese in a frying pan.” I quickly gathered all the ingredients. Wash the parsley and finely chop it. I grated the cheese. Mixed all the ingredients for the filling: cottage cheese, cheese, parsley, salt, pepper. I also added sour cream to the filling, since the cottage cheese was a bit dry. I put the filling on the pita bread, brushed the edges with beaten egg and wrapped it as shown in the photo. I fried the finished triangles in vegetable oil on both sides. Breakfast was quick and very filling. Two pieces were enough for me to fill up. My husband especially liked the filling inside the khachapuri. Thank you for the recipe!
