    Add kefir, jam (by the way, if it is very thick, you can also warm it up a little to make it a little thinner), as well as melted butter.

    Add baking soda and cinnamon to the flour. Sift it in portions and add to the dough. You may need more or less flour. Focus on the desired consistency of the dough.

    Stir. The dough should be smooth and tender. In terms of thickness, it should resemble pancake dough, so if suddenly your jam is liquid, you may need to add another 50-80 g of flour.

    Transfer the dough into the mold. For baking, you can use any suitable form, it is advisable that its diameter is about 24 cm at least so that the level of the dough is not too high. I used a cake pan for baking, its diameter is about 23 cm. Pre-grease the pan with butter or line it with baking paper.

    Bake the gingerbread at 170-180 C for about 45 minutes, the time will depend on the height of the pie. Check readiness with a skewer.

We really liked the kefir gingerbread with jam! I took quince jam, it contains liquid transparent syrup and quince pieces that look like candied fruit. I kneaded the dough from 100 ml. kefir and 100 ml. serum. I achieved the consistency of thick sour cream, so I added another heaped spoonful of flour. I mixed the jam into the dough last. I baked the gingerbread in a round pan with a diameter of 20 cm for exactly 40 minutes. The top is a little cracked, but that's normal. The gingerbread tastes simply wonderful! The crumb is soft, juicy, porous. Quince pieces fit perfectly into this delicious pie. Now I will try baking with a different jam.
