Juicy sponge cake with curd and vanilla cream
Ingredients
Step-by-step preparation
STEP 1
Let's prepare the necessary ingredients for cooking. The cream should be chilled, the butter should be at room temperature.
STEP 2
We separate the eggs into whites and yolks. Beat the egg whites into a fluffy foam, then add sugar (take the larger half portion, 120 grams) and beat until stiff peaks form. Add the remaining sugar to the yolks and beat until white. Then combine the yellows with 1/3 of the whites and mix.
STEP 3
Sift the flour into the resulting mass in parts and mix gently using a silicone spatula.
STEP 4
Now sift cocoa powder into the dough and mix gently.
STEP 5
Place the remaining whites into the dough and mix.
STEP 6
Grease the multicooker bowl with butter, lightly dust it with flour, then place the dough into it. Level the surface. Place the bowl in the multicooker, select the “Baking” program, and bake for one hour.
STEP 7
Let's prepare the ganache. Melt the chocolate. This can be done on the stove, using very low gas. You can also melt the chocolate in the microwave.
STEP 8
Cool the chocolate to room temperature, then add softened butter to it. Stir until smooth and let the ganache sit for half an hour. It will become thicker.
STEP 9
Now let's prepare the cream. We rub the cottage cheese through a sieve, or you can punch it with an immersion blender. So, pour sugar into the cottage cheese and beat with a blender until smooth.
STEP 10
Beat the chilled cream with vanilla sugar until fluffy, then add it to the curd mass and mix. Place the cream in the refrigerator for half an hour.
STEP 11
Cut the biscuit into three layers and trim using a cooking ring. Let's start assembling the cake. Soak the cakes with syrup.
STEP 12
Spread half the cream and smooth it out.
STEP 13
Now let's lay out the cherries. We try to distribute it evenly over the surface. This way we collect the whole cake. Level the surface with chocolate ganache. We send it to the refrigerator.
STEP 14
Now, the cake has been in the refrigerator for 2 hours, the chocolate ganache has completely frozen. All that remains is to decorate and serve!
STEP 15
You can decorate it to your liking.
