Also choose apples according to your taste, I took sweet and sour. You can adjust their sweetness with sugar by adding or subtracting its amount in the composition. Instead of sugar, you can use honey or a sweetener. Remove the fermented baked milk from the refrigerator in advance; it should be at room temperature.

    Beat the eggs with sugar until fluffy in a separate deep bowl. It's better to do this with a mixer.

    Pour fermented baked milk into the beaten eggs. Beat the resulting mass again until it becomes homogeneous. This time you can use a regular whisk.

    Sift the flour with baking powder and add it to the dough in parts. Please note that you may need more or less flour than I did. Focus on the consistency of the dough.

    Beat the dough until smooth. It should be fluid, but not too liquid.

    Wash the apples and dry them. Remove seeds and cut into slices. I don’t peel the apples - this way the slices retain their shape. But, if you want, you can cut off the peel. You can also cut the apples into cubes rather than slices.

    Grease a baking dish with butter. Place some apples on the bottom of the pan and sprinkle them with ground cinnamon.

    Pour half the batter over the apples to completely cover the fruit and smooth out.

By the way, I like ryazhenka even better in baking than kefir. The pies have a special caramel flavor. The pie is similar to a sponge cake, but at the same time very juicy! I had two apples, but I wanted more filling. Therefore, I laid out apple slices at the bottom of the mold, covered it with a layer of airy dough and placed slices of a large, strong apricot on it. There is another layer of dough on top. My mold is 20 cm in diameter. The result is a tall, airy, porous cake. It's just moist, incredibly flavorful, and so delicious! In just one tea party, my children and nephews devoured this wonderful pie) Thank you very much for the recipe, I recommend it!
