Homemade lavash roll with filling

Step-by-step preparation
STEP 1
For the dough, dissolve salt in hot water. Sift the flour, make a hole and pour in water. Mix water with flour with quick movements and knead a homogeneous dough. Do not pour out the flour all at once, leave 2 spoons. If necessary, use it during the kneading process.
STEP 2
The dough should be soft. Roll it into a ball, cover and leave for half an hour.
STEP 3
In the meantime, prepare the curd cheese. Grind the butter, cottage cheese and chopped cucumber, softened at room temperature, in a blender until smooth. Salt to taste. Almette curd cheese is ready.
STEP 4
Divide the dough into 4 parts. Sprinkle the table well with flour so that the rolled out dough does not stick to the table. Roll out the dough very(!) thinly. I leveled the future pita bread on a plate, the diameter of which approximately corresponds to the diameter of the frying pan (mine is 22 cm).
STEP 5
Heat the frying pan well. Using a rolling pin, carefully transfer the rolled out layer to the pan. Reduce heat to medium.
STEP 6
Fry the pita bread in a dry frying pan until dark brown, about 1 minute on each side. When bubbles appear in the flatbread, pierce them so that the entire surface of the pita bread is adjacent to the pan.
STEP 7
Remove the finished pita bread and spray it with water from a spray bottle. Prepare the rest of the pita bread in the same way.
STEP 8
Let's start preparing the roll. Grease the pita bread with curd cheese.
STEP 9
Sprinkle with finely chopped fresh dill.
STEP 10
Top with finely chopped crab sticks. It is better to lay out the filling, not reaching 2 centimeters to the edge, so that when twisting, the components of the roll do not come out.
STEP 11
Cover with a second sheet of lavash. Similarly, grease with cottage cheese and sprinkle with dill.
STEP 12
I placed thinly sliced tomatoes on one half, and pressed meat, cut into strips, on the other. You can make whatever filling you want. Everything is to your taste.
STEP 13
Then roll the roll tightly, place it in cling film and put it in the refrigerator for 2 hours to soak and soften. I got 2 of these rolls.
STEP 14
Before serving, cut the roll into portions. Bon appetit!
