Green cabbage soup with nettles in chicken broth

Step-by-step preparation
STEP 1
Prepare everything you need. Rinse the greens in advance to remove soil and bugs. Lightly pour boiling water over the nettles so as not to sting and cut them. If the nettle is very young, you can use it together with the stem. And if not very good, then it is better to use young leaves on top.
STEP 2
Rinse the chicken wings, add cold water and cook.
STEP 3
Grate carrots on a coarse grater

Cut greens and potatoes, prepare spices
STEP 5
Bring the chicken to a boil and cook for 1-2 minutes. Then remove the pan from the heat and rinse the wings in running water. This way we don’t have to remove the foam from the broth with a slotted spoon. Then put in hot water for the broth, cover with a lid, bring to a boil, add salt and onion to the broth and cook for 30 minutes.
STEP 6
Throw away the onion and take the finished wings out onto a plate.
STEP 7
Add carrots to the broth, cook for 5 minutes and add potatoes. Cook for another 15 minutes. Then add bay leaf, peppercorns and allspice.
STEP 8
Then all the greens. Boil for a couple of minutes and remove the pan from the heat. Don't forget to taste the cabbage soup and add salt or pepper if necessary. Let it brew for 20-30 minutes. At first, the borscht will have a very strong nettle flavor. But as soon as it infuses a little, the taste of nettle will practically not be felt.
STEP 9
Place the wings on a plate, pour hot cabbage soup, add sour cream and a boiled egg. Soft black bread will add charm to this light, spring, delicious and healthy dish. Bon appetit!
