We love cabbage, especially sauerkraut, but we have never tried cabbage soup made from it. I’m correcting this gap) I cooked cabbage soup using veal, using the pulp of the peritoneum. I didn’t cook it as a whole piece, I cut it into portions so that it would cook better. The broth was cooked for two hours to soften the meat. Adding the onion really cleared up the broth! When frying the onions and carrots, I thought that the cabbage could also be simmered a little and added it to the frying pan. I fried it all and added a little broth and simmered it for about 10 minutes. I didn’t add peppercorns, I was afraid that it would get on my teeth. I added everything ground and a little more paprika. The cabbage was not very salty and not sour, so I added salt to the soup at the end. The cabbage soup turned out unusual for us, but we liked the taste. The cabbage is elastic, a little crunchy, it’s even interesting) The broth is rich in the juices of meat and vegetables, as well as the cabbage itself, very pleasant and piquant. I made cabbage soup from domestic duck. But you can use any meat. I put a pan of water on the fire. I washed the meat, peeled one onion and put it whole together with the meat in the pan. Bring to a boil and skim off the foam. Then I cooked the meat until done, it took me 30 minutes. Then I washed and peeled the potatoes and cut them into medium cubes. I grated the carrots on a coarse grater and cut the onions into small cubes. Vegetables were fried in vegetable oil. When the meat was cooked, I took it out of the pan and cut it into pieces, and threw away the boiled onion. I put the chopped meat back into the pan, along with the potatoes. Cooked for about 10 minutes and then added sauerkraut. After that I cook for another 20 minutes. Then I add salt and put the fried onions and carrots into the pan. I did not add bay leaf and pepper. Bring to a boil and cook for another 10 minutes. The sauerkraut cabbage soup is ready. Cooking time may vary, depending on what kind of meat you choose. We happily dined on cabbage soup, adding sour cream.
