    How to make gnocchi with mushrooms? Prepare your food. It is better to choose old potatoes, not young ones - they have more starch, and the dough will be better molded from them. The approximate amount of flour is given, it may take more or less, you will look at the dough. Any mushrooms will do - forest, frozen, dry. The only difference will be the way they are processed.

    Rinse the potatoes well with a brush under the tap. Then, without cleaning, place in a saucepan, cover with clean cold water and cook over medium heat.     Carefully remove the skins from the hot potatoes so as not to burn yourself. Mash the peeled potatoes with a masher, add salt and egg. Stir the egg into the puree.

    Add flour to potatoes in portions, stirring quickly after each portion. Try not to even knead, but to combine the potato mass with the flour using folding movements. As a result, you should get a homogeneous dough, not liquid or thick, a little sticky, but holding its shape. You may need a little less or more flour, depending on the required consistency.     Form some of the dough into a sausage on a floured board.

    Boil the gnocchi in salted water - as soon as they float, remove them to a plate with a slotted spoon. Cook the gnocchi in batches so they don't stick together too much.

    Heat a frying pan over medium heat, pour vegetable oil into it. Fry the boiled gnocchi for a few minutes, stirring, until golden brown. Then remove from the pan.

    Dilute the sour cream with a small amount of boiling water - this will prevent the sauce from curdling. Pour sour cream over the mushrooms.
