    Heat the kefir or dilute it with hot water - it should become warm. Thanks to this, the reaction with the baking powder will happen faster and more actively, and the pancakes will turn out fluffy. Pour kefir into the egg mixture. Stir with a whisk.

I used 240 grams of flour, but the kefir was liquid due to the fact that I diluted it with water. Do not overdo mixing the dough. As soon as all the flour is mixed in, stop, otherwise the air bubbles that were released during the reaction of kefir and baking powder may disappear. Do not stir the dough any more in the future.

    Take a frying pan with a thick bottom and place it over high heat. Pour in vegetable oil - there should be a lot of it, 5-10 mm. Heat the oil well. Place a small cup next to the stove and also pour a little vegetable oil into it. Dip a spoon into the oil and scoop out the dough. Place the dough into the heated oil. Thanks to the fact that the spoon is well greased, the dough will flow into the pan. very comfortably! For one pancake of dough, take a level tablespoon.

For breakfast I made fluffy kefir pancakes with baking powder. But instead of kefir, I took whey and heated it a little in the microwave, and replaced the baking powder with a teaspoon of soda. I did not extinguish the soda, since the acidic environment of the whey is sufficient for this. I kneaded the dough and let it stand for a while. Baked in a well-heated frying pan with butter. I laid out the pancakes on paper napkins so that excess fat was absorbed into them. The pancakes turned out fluffy and tender. The whole family appreciated them. I served the pancakes with nightshade jam. The recipe is excellent, I recommend it!
