STEP 1

How to make flounder with vegetables in the oven? To begin, prepare the necessary ingredients according to the list. Vegetables can be replaced or supplemented to suit your taste. You can replace the red onion with regular onion or shallot. Instead of cherry tomatoes, you can use regular tomatoes. To make the dish bright, use red and yellow tomatoes.
STEP 2

Wash the flounder and dry. If the fish has a head, it can be preserved by first removing the gills. The fins and tail can be removed if desired. Using a sharp knife, make slits on both sides of the fish.
STEP 3

Peel the potatoes and cut into slices or cubes, but not very finely, so that they retain their shape during baking.
STEP 4

Peel the sweet pepper from seeds and stems and cut into rings or cubes.
STEP 5

Wash the cherry tomatoes, dry and cut in half. If you have regular tomatoes, cut them into slices.
STEP 6

Peel the onion and cut into slices. To prevent the onion from stinging your eyes when slicing, wash it and the knife with cold water. Peel the garlic and cut into petals.
STEP 7

Prepare the necessary ingredients for the marinade. Ingredients can be supplemented or replaced with others to taste. I used olive oil, but any vegetable oil will do.
STEP 8

In a bowl, combine vegetable oil, lemon juice and zest, fish spices, salt and pepper and whisk thoroughly with a fork until smooth.
STEP 9

Carefully coat the flounder with marinade on both sides and leave to marinate for 30 minutes. Turn on the oven to 180 degrees in advance.
STEP 10

Place the flounder in a baking dish, back side up. Pour the remaining marinade over the fish. Place the prepared vegetables around the flounder. Place the fish and vegetables in an oven preheated to 180°C for 30-35 minutes or longer until the fish and vegetables are cooked. The exact baking time depends on the characteristics of your technique.
STEP 11

Garnish the baked flounder with vegetables with fresh herbs and serve. Bon appetit!
