STEP 1
How to make flatbreads with cheese on kefir? Measure out the required ingredients. Take out the kefir in advance so that it is at room temperature.

Sift the flour into a wide bowl to enrich it with oxygen. The cakes will be softer and the dough more homogeneous.
STEP 3
Combine flour with soda. Mix well so that the dry ingredients are evenly distributed among themselves.

In a large container, mix kefir with salt.

Add about 3/4 of the sifted flour and mix with a spoon.

The dough is still too viscous and sticky.
STEP 7
Add flour in small portions while mixing the dough with your hands. You may need more or less flour from the specified amount. It depends on the properties and quality of the flour. Therefore, when kneading, focus on the consistency of the dough.

The dough turns out homogeneous, smooth, soft. It shouldn't be too tight, but should hold its shape. Wrap the dough in cling film or cover with a towel and leave on the counter for 30 minutes. During this time, the gluten in the flour will disperse, and the dough will become more elastic and pliable.

Meanwhile, prepare the filling. Any pickled cheese (brynza, feta) or hard cheese is suitable for it. You can use any greens or make them without.

Grate the cheese on a coarse grater. You can take several types of cheese or limit yourself to just one.
STEP 11
Wash the greens, dry them, remove thick, rough stems. Finely chop the greens.
STEP 12
Combine grated cheese and herbs, mix well.
STEP 13
Roll the rested dough into a sausage. Divide the dough into equal parts, the number of which depends on the desired size of the cakes.

Form balls from the cheese filling according to the number of pieces of dough.

Roll out each piece of dough on a floured surface into a round cake.
STEP 16
Place the cheese filling in the center of the tortilla.
STEP 17
Gather the edges of the dough over the filling and seal well.

Lightly press the dough with the filling with your palm and carefully, so that the dough does not tear, roll it into a round cake. Choose the thickness of the cake as desired. Form all the cakes in this way.

The flatbreads are cooked in a dry frying pan. Heat a frying pan and fry the flatbread over medium heat on one side until golden brown, about 2 minutes.
STEP 20
Flip the tortilla over and fry the other side until golden brown. The flatbreads fry quickly, so it’s convenient to make all the flatbreads at once and then fry. Based on the time, follow your stove.
STEP 21
Place the finished tortillas in a pile on top of each other to keep them warm longer. Immediately after cooking, brush the top of each flatbread with butter.
STEP 22
Serve the flatbreads warm. They're good cold too. And heated in the microwave, they will be as soft and tasty as if they came from a frying pan. Bon appetit!
