I have been frying river fish for many years, but I have never fried it in batter. I usually dip boneless sea fish or catfish into the batter. I decided to try what would happen with the “bony” fish) I didn’t have silver carp this time, but I had a fresh carp. In principle, these types of fish are similar, both are fatty and tasty. For the batter, I decided to make homemade mayonnaise with a raw egg, added all the other ingredients to it and stirred. The fish steaks were pre-salted and peppered. I fried it on all sides over low heat so that the fish had time to cook, but also so that the batter did not burn. The fish with mayonnaise in batter turned out to be excellent; I didn’t even expect that ordinary river fish would turn out so tasty! The batter turned out to be porous, soft, and tasty, like the dough in a jellied pie. And the fish was well fried, but remained juicy and soft. Great recipe, I'll give it a try!
