In the evening there was no time to prepare a complex dinner. But I had defrosted pangasius fillet. This fish is tender, cooks quickly and, as it turns out, goes well with an omelet. I baked one and a half portions of fish in an omelette in the oven, which was just enough for my daughter and I. I preheated the oven in advance while I was assembling my casserole. I had frozen carrots, I warmed them up in the microwave until they were well heated. I squeezed out the excess water. I think this makes the carrots more tender. I made the omelet from homemade eggs with a bright yolk. I didn’t add any greens, my daughter doesn’t eat them. The fish and carrots were poured with omelette mixture and baked for 25 minutes. This time was enough for my fish; it became very tender. Especially in combination with an omelet. I would also add broccoli to this casserole). Very tasty, satisfying and fast. Thank you!
