Eggplants with minced meat and cheese

STEP 1

How to bake eggplants with minced meat and cheese? Prepare your ingredients. I took one large eggplant, two small ones would also work. If possible, choose fruits that are even and uniform in thickness so that the halves look beautiful and bake evenly.
STEP 2

Wash the eggplant and dry. Cut lengthwise into two halves. Carefully, trying not to damage the walls, remove some of the pulp. It is more convenient to do this with a dessert spoon. Do not throw away the pulp; it will be useful for filling.
STEP 3

Salt the resulting boats a little. This way you will get rid of the bitterness inherent in these vegetables.
STEP 4

Prepare the filling. How to make the filling? Prepare your food. Minced meat can be made from any meat; you can make it yourself, or you can buy it ready-made. Add bacon, garlic and spices to your liking. For example, I don’t add garlic, but someone will need it in this dish.

Salt the eggplant pulp and leave for 5 minutes. Drain off the juice that has been released - the bitterness will go away with it.
STEP 6

Cut the tomatoes into small cubes. You can remove the skin from them first.
STEP 7

Also cut the bacon into small pieces.
STEP 8

Just like eggplant pulp.

Wash the parsley (or any other greens to taste), dry and finely chop.
STEP 10

Grate the cheese on a coarse grater.
STEP 11

Heat vegetable oil in a frying pan over medium heat and add minced meat. Fry the minced meat for 5 minutes, stirring it and breaking up any large lumps.
STEP 12

Add chopped eggplant pulp, bacon, tomatoes and parsley to the minced meat.
STEP 13

Mix everything and fry for about 5 minutes. Finally add salt and pepper.
STEP 14

Rinse the eggplant boats to remove any juice and dry them. Lubricate them with vegetable oil inside and out. Line a baking tray or baking dish with foil - it will be easier for you to wash them later, and the eggplant will not stick to the bottom.
STEP 15

Fill the eggplant halves with minced meat.
STEP 16

Lubricate the filling with mayonnaise on top.
STEP 17

And then sprinkle with grated cheese. Bake the eggplants in an oven preheated to 180°C for 20-30 minutes, depending on the size of the boats, until golden brown. Serve the eggplants hot. Bon appetit!
