    Wash the eggplant and dry. Cut lengthwise into two halves. Carefully, trying not to damage the walls, remove some of the pulp. It is more convenient to do this with a dessert spoon. Do not throw away the pulp; it will be useful for filling.

    Salt the resulting boats a little. This way you will get rid of the bitterness inherent in these vegetables.

    Prepare the filling. How to make the filling? Prepare your food. Minced meat can be made from any meat; you can make it yourself, or you can buy it ready-made. Add bacon, garlic and spices to your liking. For example, I don’t add garlic, but someone will need it in this dish.

    Salt the eggplant pulp and leave for 5 minutes. Drain off the juice that has been released - the bitterness will go away with it.

    Cut the tomatoes into small cubes. You can remove the skin from them first.

I made stuffed eggplants for lunch. It turned out very tasty! I recommend everyone try it! I cut the eggplant lengthwise into two parts. I cut through the pulp with a knife, making a “mesh”, which made it easy to remove it and make a recess for the minced meat. I salted the finished boats to remove the bitterness from them and set them aside. For the filling, I took some pulp, chopped it finely, and put the rest into a bag and put it in the freezer. I prepared the minced meat myself by grinding the pork in a blender. I put it in a frying pan and fried it for 5 minutes. Then I added the eggplant pulp, chopped tomatoes and parsley and fried for another 5 minutes (I did not add bacon and garlic). At the end I added salt. I rinsed the boats, dried them, after which I greased them inside and out with vegetable oil, added filling, mayonnaise and sprinkled with cheese. I baked the eggplants with minced meat and cheese in the oven for 30 minutes at 220°. They came out bright and delicious! I really liked the combination of eggplant with the filling; all the ingredients coexist in complete harmony. The eggplant itself presents itself delicately, and thanks to the salting it does not taste bitter at all. Thank you very much for the recipe!
