  1. STEP 1

    STEP 1

How to make curd Viennese waffles in a waffle iron? Prepare the necessary products. The butter must be taken out of the refrigerator in advance so that it is soft. Use moderately dry cottage cheese, adjust the fat content to your taste. If you have coarse-grained cottage cheese, it is better to first rub it through a fine sieve or punch it with a blender. Sift flour with starch and baking powder in advance. How to choose cottage cheese, read the article at the end of this recipe.

  2. STEP 2

    STEP 2

It is advisable to knead the dough using a mixer, this will make it much easier to achieve a homogeneous consistency. In a deep bowl, combine softened butter, sugar and vanilla sugar. Using a mixer at high speed, mix everything well.

  3. STEP 3

    STEP 3

The mass should be dense. It should keep its shape well.

  4. STEP 4

    STEP 4

Add cottage cheese to the butter mixture and beat everything well again.

  5. STEP 5

    STEP 5

Add eggs to the curd mixture one at a time, beating the mixture well with a mixer each time.

  6. STEP 6

    STEP 6

Add the sifted flour, starch and baking powder into the dough in parts, kneading it each time with a spatula or whisking with a mixer.

  7. STEP 7

    STEP 7

The dough should be thick and homogeneous. Depending on its properties, you may need a little less or more flour. Read about the properties of flour in the article at the end of this recipe.

  8. STEP 8

    STEP 8

Preheat the waffle iron well. If desired, you can grease the waffle iron plates with vegetable oil. I don't do this because there is a lot of oil in this dough. Place 1 tablespoon of dough on the heated pans. Bake Viennese waffles with cottage cheese for 5-7 minutes, but be sure to use your waffle iron as a guide, as they all have different capacities.

  9. STEP 9

    STEP 9

The waffles turn out rosy, aromatic and tender.

  10. STEP 10

    STEP 10

I made 14 waffles in total.

    Bon appetit!

Viennese waffles bake very quickly! The dough is also not difficult to knead. That’s why I really like this version of dessert, but the waffles run out quickly) I reduced the amount of sugar to 150g, which is enough for me. I used potato starch; corn starch is more delicate and more suitable for cream desserts. I beat the curd mass with an immersion blender, and then kneaded it with a silicone spatula while adding flour. The dough came out thick. I got 16 pieces, I didn’t completely fill the molds, I just put a lumpy tablespoon in the middle of the plates. Hot waffles are crispy, and when they cool down they become soft and tender. The aroma of vanilla perfectly complements cottage cheese pastries. I didn’t even have time to make tea, everything was already eaten) Thank you very much for the delicious recipe!

I really liked the recipe, my son is delighted. These are the first waffles we made on the new multi-maker. Mixed ingredients in a food processor.

I'm slowly mastering the multi-baker. I saved this recipe for Viennese curd waffles in KK a long time ago so that I could cook it later. I haven’t made cottage cheese Viennese waffles yet, I was interested in how it would turn out. I decided to make it with half the ingredients. Reduced the amount of sugar a little. Using a mixer, the dough is prepared quickly. I put a full tablespoon of dough on the multi-baker panels; I was afraid to put more so that the dough wouldn’t leak out. The waffles turned out just wonderful! Very tasty, tender, aromatic, with a pronounced curd taste. At first the waffles were a little crispy, but then they became soft. I'm very pleased with the result! I will make more waffles like this, next time I’ll try to put more dough in the multi-baker to make the waffles more square. Thank you very much to the author for this recipe! Here is my photo report)))

Great recipe! Everything worked out from the first waffle! Everything is removed. I have the most ordinary waffle iron, which heats up on the burner. By the way, I didn’t put starch)))

I accidentally came across the recipe for these waffles))) And I’m so glad) They turned out crispy and tender, soft inside! I’m baking it now, and the aroma is driving me crazy) I’ll definitely bake these often. According to the recipe, I only replaced the butter with margarine (I had it in stock), it was no different, because it was of high quality. In the end there were 20 pieces. You can eat it with sour cream, plain, or with jam!!! Many thanks to the author for the recipe!!!

I baked thin waffles according to this recipe, they turned out very tasty and the oil did not leak out of the waffle iron (this is often a problem with recipes). Thank you very much!
