    Wash the eggs with soda to remove all dirt and beat them into a bowl. Next, add sugar and beat with a whisk or mixer until the sugar grains dissolve.

    Add the pureed cottage cheese and beat everything again until smooth. If you have soft, homogeneous cottage cheese, then you don’t have to wipe it, but if it’s grainy, then the cottage cheese should be rubbed through a sieve or punched with a blender.     Use cold (not frozen) butter. Grate it on a coarse grater and add to the total mass. Mix well.

    Sift the flour with vanilla in advance and add gradually. You may need a little less or more flour, it depends on the quality of the flour and the moisture content of the cottage cheese.     Knead soft, plastic curd dough. It should not be too dense, but not too sticky. Wrap the dough in cling film and place in the refrigerator for 1 hour.

    Divide the chilled dough into 3 parts. Put two back in the cold, and roll out one part on a floured surface into a thin layer no more than 5 mm thick. Use a round notch to cut out circles.

    Carefully wrap the circles with a roll.

    Using a sharp knife, cut the roll crosswise into two equal parts. Thus, from one roll you get 2 curd “roses”.

    Press the “rose” a little at the base so that during baking the “flower” better retains its shape and does not open up. Bend the petals of the rose slightly. Form cookies using the remaining dough pieces in the same way.

    Place the prepared cottage cheese cookies on a baking sheet covered with parchment paper. In total I got about 30 “roses”.

Aromatic, tender and, importantly, cookies that you can eat without drinking tea or compote, because they are moist. The petals of a curd rose are just like a puff pastry. However, if you want to achieve this result, do not take dry and low-fat cottage cheese; the higher the percentage of fat content, the better. And do not fill the dough with flour, even if it sticks to your hands a little. This was tested from personal experience - I made cookies twice and experimented with the fat content of the cottage cheese. Thanks to the author for the recipe!

Yesterday I baked curd roses. I made it for half a portion, so it was just enough for one baking sheet. The cookies came out very tasty and aromatic. And how beautiful!!!
