STEP 1

How to bake classic rice pudding with raisins in the oven? Very simple. To begin, prepare the necessary ingredients according to the list. For classic pudding, it is better to use round-grain rice. Large, selected eggs are needed. If the eggs are small, take 4 pieces.
STEP 2

Rinse the raisins thoroughly and dry. Then pour lemon juice over the raisins and leave for 10-15 minutes. You can use dark or light raisins or a mixture of both.
STEP 3

Divide the eggs into yolks and whites. It is important that when separating, not a drop of yolk gets into the white, otherwise it will not foam. Place the whites in the refrigerator.
STEP 4

Melt the butter in a saucepan over medium heat.
STEP 5

Add washed rice and stir-fry until translucent. At the end, reduce the heat to minimum.
STEP 6

Boil the milk and pour it into the saucepan with the rice.
STEP 7

Add zest and salt. Simmer, stirring, until the rice is half cooked, about 7-10 minutes. Then remove the saucepan from the heat and cool the mixture.
STEP 8

As the rice cools, it will absorb the remaining milk, resulting in a thick rice porridge.
STEP 9

Beat the yolks with sugar until fluffy. The mass should increase in volume and lighten.
STEP 10

Add rice mixture and raisins with lemon juice to the yolks beaten with sugar. Mix everything.
STEP 11

Separately, beat the whites with a mixer into a fluffy, dense, stable foam.
STEP 12

Gently fold the whipped whites into the rice mixture.
STEP 13

Place the rice mixture into greased baking pans and smooth out. Place the pudding in the oven preheated to 170°C for 40-50 minutes. Bon appetit!
