STEP 1

You can replace sugar with any sweetener suitable for heat treatment. Milk of any fat content is suitable. Large, selected eggs are needed. If the eggs are small, you can use 3 pieces. STEP 2
Divide one egg into yolk and white.
STEP 3
In a bowl, beat the whole egg and the white of the second until smooth. Set aside the remaining yolk to brush the pudding before baking.

STEP 5
Pour milk into a saucepan and place over medium heat. Before the milk boils, add semolina in a thin stream with constant stirring. If you pour semolina into boiling milk, lumps can quickly form. Stirring, cook the semolina porridge over low heat until thick. At the same time, make sure that the porridge does not burn on the bottom.
STEP 6
Remove the finished semolina porridge from the heat and let it cool slightly. In hot porridge, the eggs will quickly curl.
STEP 7
Pour the beaten eggs into the semolina porridge and mix thoroughly until smooth. If you wish, you can beat the mass with a blender or mixer until fluffy.
STEP 8
Grease a baking dish with butter. Add semolina porridge and smooth it out. Depending on the size of the pan, the pudding will be thicker or thinner. Using a brush, brush the surface of the pudding with the remaining yolk. Bake in an oven preheated to 180°C for about 30 minutes until golden brown. Time and temperature are approximate, the exact baking time will depend on the thickness of the mixture, the chosen form and your technique.
