Classic Caesar salad with shrimp

STEP 1
How to make a classic Caesar salad with shrimp? First of all, prepare all the necessary ingredients according to the list. It is better to take tiger or king shrimp for the salad, but it will be no less tasty with regular ones. Which lettuce leaves are best to use? The classic recipe uses Romano, you can take Lettuce, Endvy, Iceberg or Chinese cabbage. Rinse tomatoes, lemon and leaves in clean water and dry with napkins.
STEP 2
Remove the shrimp from the freezer and defrost at room temperature. To defrost faster, you can pour cool water over the shrimp. Remove the shells and heads from the mollusks; the tails can be left or removed as well - at your discretion.
STEP 3
Next, there are two methods of heat treatment of shrimp. They can be boiled in boiling water until tender or marinated and fried in a frying pan. I often cook using the second method, as it seems to me that the taste of the salad is more rich. So, place the shrimp in a deep small cup, add 1 tbsp. lemon juice, 2 tbsp. vegetable or olive oil and a pinch of salt. If you have Worcestershire sauce, add that too. Leave for 10 minutes.
STEP 4
Fry the shrimp in a hot frying pan for a couple of minutes on one side.

And the same amount on the other.

Cut off the crusts from white bread (you can use a loaf). Cut the bread into small cubes 1-2 cm in size. Fry in a small amount of olive or vegetable oil. If desired, you can add a little garlic, so the crackers will turn out fragrant.
STEP 7
Place the crackers on a baking sheet and place in a preheated oven to dry for 5-10 minutes.
STEP 8
Pour cold water over the eggs and place on the stove. Once boiling, reduce the flame slightly and cook the eggs for one minute. They should be soft-boiled. We only need the yolks to prepare the dressing.
STEP 9
Prepare the sauce. To do this, place two yolks, mustard, 2 tbsp in a blender bowl. lemon juice, balsamic vinegar, 4 tbsp. olive or vegetable oil, garlic, salt, sugar and ground black pepper.
STEP 10
Beat everything until smooth.
STEP 11
All that remains is to assemble the salad. Tear the sheets randomly with your hands and place them on a flat plate as the first layer.
STEP 12
Next comes the turn of croutons and cherry tomatoes. Tomatoes can be cut in half or quarters.
STEP 13
Place the next layer of shrimp.
STEP 14
Pour the sauce evenly over the salad.
STEP 15
And add cheese, grated on a fine grater.
STEP 16
If desired, sprinkle crackers on top and garnish with herbs. Caesar is ready, serve immediately!
