Chocolate pancake cake with curd cream

Step-by-step preparation
STEP 1

Pancakes. To prepare chocolate pancakes for the cake we will need: 600 ml of milk
STEP 2

Break the chocolate into small pieces. Place chocolate, butter in a saucepan, pour in 250 ml of milk. Place the saucepan over low heat and heat the mixture, stirring, until the chocolate is completely dissolved.
STEP 3

In a deep bowl, beat eggs with sugar and salt until fluffy.
STEP 4

Pour in the remaining milk and stir.
STEP 5

Add the sifted flour and beat again until smooth.
STEP 6

Pour the chocolate mixture into the dough. Mix.
STEP 7

Leave the dough for 25 minutes.
STEP 8

Bake pancakes on both sides in vegetable oil. I baked pancakes in a frying pan with a diameter of 20 cm. This way the cake will turn out tall. There were 17 pancakes in total, of which 2 pancakes were used to decorate the top of the cake.
STEP 9

To prepare the filling we will need: 400 g of cottage cheese
STEP 10

Place cottage cheese, sour cream, sugar and vanilla sugar into a blender bowl.
STEP 11

Beat everything in a blender until smooth.
STEP 12

Place the pancakes on a plate in a stack on top of each other, covering each with curd filling.
STEP 13

Grease the top and sides of the cake with the remaining cottage cheese.
STEP 14

Roll the pancakes set aside for decoration into tight rolls and cut into circles. Decorate the top of the cake with pancakes, pomegranate seeds and mint leaves. Bon appetit!
