Chicken bozartma in Azerbaijani style
The national Azerbaijani dish is delicious chicken soup! Bozartma turns out to be quite fatty and rich. Therefore, if you want to reduce fat content, remove skin and excess fat from your thighs.
There are many variations of this dish - there are recipes with the addition of carrots, bell peppers, prunes, tomatoes, cherry plums and much more. This is a basic recipe, and you can experiment as you like.

Step-by-step preparation
Cooking time: 1 hr 20 mins
STEP 1
Prepare the ingredients.
STEP 2
Cut the onion into half rings.
STEP 3
Melt the butter in a cauldron or deep frying pan and fry the onion until transparent.
STEP 4
Cut the chicken thighs in half and add to the cauldron with the onions. Fry together for about 5 minutes.
STEP 5
Peel the potatoes, chop coarsely.
STEP 6
Place the potatoes in the cauldron.
STEP 7
Add bay leaves to the soup. Add salt, pepper and stir. Pour in 2 liters of hot water and bring to a boil. Reduce heat and simmer covered for about 25 minutes.
STEP 8
Wash and chop the greens. Let the finished soup brew for 5-7 minutes, pour into plates and sprinkle with chopped herbs.

It turned out to be a wonderful soup! Very tasty, aromatic, rich, filling! The broth is transparent and golden! Beauty! I prepared bozartma for the first time. I took a cauldron for this. I fried onions in butter in it. I added pieces of chicken - back and half of the breast. Fry everything together for 5 minutes. Then I put chopped potatoes, carrots (not in the recipe), and bay leaf into the cauldron. Added salt and ready-made seasoning for meat. I poured hot water in and simmered, covered, for 25 minutes. We really liked the soup! The husband ate and praised. I will definitely cook Azerbaijani chicken bozartma again! Thank you so much for the recipe!
