A simple and quick sponge cake for the whole family! This cherry charlotte is baked in the oven for about half an hour. You can cook it with any cherries, fresh or frozen. The taste of the pie is simply wonderful!

    Beat the eggs with a mixer until fluffy and light foam, gradually adding sugar and vanilla sugar. The mass should increase in volume by 3-4 times and lighten.

    Pour the sifted flour mixture into the dough in parts and mix gently with a spatula, being careful not to settle the mixture. It may take you more or less flour than it did for me. Focus on the consistency of the dough.

    The consistency of the dough should be liquid. Instead of mixing with a spatula, you can beat the dough with a mixer at low speed and for a short time.

    Add the remaining cornstarch to the prepared cherries and stir until the berries are evenly coated. Starch can be replaced with flour.

    Place the cherries in starch in a parchment-lined baking dish (Ø 18 cm). Top the berries with biscuit dough. You can simply stir the berries into the dough and pour everything into the mold.

    Bake the pie in an oven preheated to 170°C for about 40-55 minutes. The exact time depends on your oven. Do not open the oven door during baking to prevent the cake from settling.

Truly a magical pie! A real cherry miracle, I would even say! I’ve been looking at this recipe “cherry charlotte with cherries in the oven” for a long time, waiting for the cherries to ripen) Hurray! I picked ripe cherries and pitted them while I beat the eggs and sugar until fluffy using a stand mixer. Added the flour mixture and beat with a mixer briefly and at low speed until smooth, as the author writes. I mixed the cherries into the dough according to the author’s advice, but during baking they still settled to the bottom) I took a pie pan with a diameter of 20 cm, I simply don’t have anything smaller. I baked the pie in the oven at 170 C for 45 minutes. After half an hour, I started checking the pie for doneness. I prepared it exactly according to the recipe. The result was an amazing cherry pie! Very tender, airy and soft sponge cake with lots of berries. Cherry charlotte is moderately sweet with a slight cherry sourness. Amazingly delicious! And a magnificent cap formed on top of the pie, it is very similar to meringue) Everyone should try this charlotte! Fantastically delicious! Thank you so much for such a delicious dessert!!!

I really love charlotte, especially with cherries. But it doesn’t always work out; often the dough is not baked or burns, which makes it difficult to remove it from the mold in a beautiful form. There might be a problem in the oven. I've never used starch for baking before, but I love this recipe! Thanks to the creators!

I have a Bosch electric oven, I prepared it according to your recipe - bake at 200 degrees for 50-60 minutes. It’s damp inside and the toothpick is wet.

I used to cook charlotte in the traditional way - with apples; this dish is a fairly frequent guest on our table. Just recently I tried making charlotte with apricots and really liked it.
