STEP 1
How to make crispy battered cauliflower? Prepare all the necessary ingredients.
STEP 2
Choose cauliflower that is firm and white with green bottom leaves. Then the finished dish will be more healthy and flavorful. Wash the cabbage thoroughly, shake off the water and separate it into inflorescences. It is advisable to make the inflorescences the same size to ensure uniform cooking of all portions. Add a little salt and stir.
STEP 3
Wash the egg in warm water to remove dirt and bacteria, break it into a bowl. Mix with a whisk or regular fork until smooth. You don't need to beat it, just mix it well.

Add salt and pepper to the egg.
STEP 5
Pour water into a bowl. Take filtered water and be sure to be very cold. It's even better if you keep it in the freezer before adding it, this will make the batter crispier. And mix everything well.
STEP 6
Sift the flour into a bowl, saturating it with oxygen and getting rid of any debris if there is any. Mix everything until the dough is homogeneous. It should be like for making pancakes.
STEP 7
Place the inflorescences in the batter and stir until they are completely covered. Cabbage inflorescences in batter can be prepared either fresh or slightly pre-blanched. Without heat treatment, the cabbage turns out to be plump, with a slight crunch and holds its shape perfectly. Blanched cabbage turns out more tender and does not have clear boundaries between the inflorescences and the batter. We prefer cabbage cooked without heat treatment.
STEP 8
Pour vegetable oil into a tall, not very large frying pan and heat over medium heat. It is best to take refined oil so as not to interrupt the taste and aroma of the main product. You can check the readiness of the oil using vermicelli. If you dip it into the oil and bubbles form on the surface, the oil is ready. Gently drop the battered florets into the oil and fry for a few minutes until golden brown on both sides.
STEP 9
Transfer cooked cabbage to paper towels to remove excess fat.
STEP 10
Transfer to a plate and serve. It can be served hot as a side dish or as a snack after cooling.
