STEP 1

How to cook cabbage soup without meat? The recipe is very simple. Prepare all the necessary ingredients according to the list. You can replace and supplement the vegetable part to your taste.

Remove the top damaged leaves from the cabbage and remove the stalk. Shred the cabbage.
STEP 3

Peel the carrots and grate on a coarse grater.
STEP 4

Peel the potatoes and cut into small cubes.
STEP 5

Peel the onion and cut into small cubes. If you or your children do not like onions, then you can not add them to the frying at all. Or add a whole onion to the broth along with the potatoes (step 7), and remove it at the very end of cooking.

Wash the parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, for example, dill, green onions, cilantro, or use a mixture of different herbs.

Boil water in a saucepan. Add potatoes and bay leaf. Cook for 15 minutes until the potatoes are done.

Heat vegetable oil in a frying pan over medium heat. Add the onion and fry for a couple of minutes until translucent.

Add carrots. Fry everything together for another 3-4 minutes.

Add cabbage, lemon juice, tomato sauce and remaining bay leaf to pan. Simmer, stirring, for 15-20 minutes. If you wish, you can add a few rings of chili pepper to the frying.

Transfer the stewed vegetables to the pan. Salt and pepper the cabbage soup to taste. Boil, stirring, for 2-3 minutes. If you wish, you can skip frying at all, but simply throw all the vegetables into the pan at the same time and cook until tender. At the very end, add tomato paste, salt and pepper.
STEP 12

Remove the pan from the heat and cover with a lid. Let the soup sit for about 10 minutes.
STEP 13

Pour the hot cabbage soup into plates, adding chopped greens to each, and serve. Bon appetit!
