If you wish, you can skip frying at all, but simply throw all the vegetables into the pan at the same time and cook until tender. At the very end, add tomato paste, salt and pepper.

My favorite cabbage soup without meat, I cooked a seasonal version. I replaced the tomato sauce with fresh tomatoes, added sweet peppers and fried it all with onions and carrots. I shredded the cabbage using a grater with one blade. I cooked frozen fresh dill along with cabbage. And as a lover of spices and seasonings, I added a universal mixture. It turned out to be an excellent light soup.

On pre-/post-holidays I always prepare light soups. Cabbage soup comes first. Before cooking, I decided to compare my skills with the experience of experts. This recipe, in my opinion, is the best of the small number of recipes for cabbage soup without meat. I followed all the proportions when cooking. Using the author’s advice, I made some changes to the ingredients: added turnips and sun-dried tomatoes. Traditionally, I cook vegetable soups using concentrated vegetable broth. This time I took the risk of preparing cabbage soup without frying it, so I didn’t use onions. The result pleased me not only with its taste, but also with its aroma and color. The broth has a rich, characteristic color for cabbage soup. Thick, as the author promises in the recipe, rich. But without the heaviness of the meat component. A wonderful recipe. Thank you.
