I’ve never cooked borscht with meatballs, a very interesting option! Today I was just thinking about what soup to make for lunch. Indeed, borscht cooks much faster with meatballs than with lump meat and bones, for example. I made minced pork and twisted the onion along with the meat. From the spices I added vegetable seasoning and freshly ground black pepper. My meatballs stuck together easily, but if the minced meat is too soft, you can put it in the refrigerator for half an hour. During this time, it will compact well and the meatballs can be easily shaped. You can also mix a little semolina into the minced meat. I boiled my meatballs in salted water for about 15 minutes. Then I added potatoes and young cabbage. At the same time, I stewed onions, carrots and beets with tomato paste. I used apple cider vinegar, I think it has a milder taste. The meatballs in the finished borscht have acquired a reddish tint on top, it looks beautiful. In general, children are most happy with meatballs in soup, because you don’t have to chew the meat). And I liked the process - fast and exciting! The most important thing is that the borscht with meatballs turned out rich and very tasty! I recommend!
