Belly roll in the oven

Incredibly tasty, appetizing, juicy, perfect for the holiday table! The belly roll takes quite a long time to cook in the oven, so time it correctly. It turns out to be a very tasty snack that is good both cold and hot. Goes great with pickles for strong drinks!

  1. STEP 1

    STEP 1

How to make a belly roll in the oven? Prepare the necessary ingredients, the main one, of course, belly (otherwise called underbelly, peritoneum). Clean the meat, wash and dry with napkins. Peel the garlic.

  2. STEP 2

    STEP 2

    Salt the belly.

  3. STEP 3

    STEP 3

Sprinkle the meat with freshly ground pepper or peppercorns crushed in a mortar. This pepper is more aromatic than regular ground pepper, which is already sold in powder.

  4. STEP 4

    STEP 4

Sprinkle the belly with the pepper mixture.

  5. STEP 5

    STEP 5

Then sprinkle the meat with khmeli-suneli. The ingredients on my package are: fenugreek, coriander, dill, celery, parsley, basil, savory, mint, bay leaf, marjoram, red pepper. As you can see, this seasoning has a rich composition, and this will make our roll very fragrant!

  6. STEP 6

    STEP 6

This is what the meat looks like after sprinkling with spices. You can use other favorite spices - it’s not critical in this recipe. I present the option that I like.

  7. STEP 7

    STEP 7

Pass the garlic through a press. And rub it on your belly.

  8. STEP 8

    STEP 8

This recipe calls for quite a bit of garlic, but you can adjust the amount to suit your taste.

  9. STEP 9

    STEP 9

Make sure that your belly is rubbed with spices on all sides as shown in the photo.

  10. STEP 10

    STEP 10

Roll the meat tightly into a roll and tie it with thread. This is not the easiest job, so you can ask your husband for help. The undercut is quite tight and it is not easy to roll it up. And then you need to hold it to wrap it with thread.

  11. STEP 11

    STEP 11

Place the roll in a baking bag and put it in the refrigerator to marinate overnight.

  12. STEP 12

    STEP 12

The next day, remove the roll from the refrigerator. Pierce the sleeve in several places with a toothpick so that air comes out of it during baking and the roll does not tear where you don’t want it.

  13. STEP 13

    STEP 13

Place the meatloaf on a baking sheet and place it in the oven at 180 degrees for about 1 hour, 1 hour and 30 minutes. Determine the exact baking time and temperature based on your oven.

  14. STEP 14

    STEP 14

After the specified time, remove the roll from the oven and wait until it cools.

  15. STEP 15

    STEP 15

Remove the cooled roll from the sleeve by cutting it.

  16. STEP 16

    STEP 16

Now it’s better to put it in a bag and put it in the refrigerator for several hours, this will make it tastier and easier to cut into portions.

  17. STEP 17

    STEP 17

Remove the roll from the refrigerator, remove the threads and cut it. It is very tasty to serve with first courses, as well as with potatoes. For better digestion, it is better to eat it as a bite with mustard or horseradish.

  18. STEP 18

    STEP 18

    Bon appetit!

It turned out that I had a small piece of puzaanina (400 grams). Having searched the website for what can be prepared from it, I settled on a recipe for a belly roll in the oven. For spices, I used freshly ground black pepper, salt, garlic and suneli hops. Tying the belly with a rope to make a roll turned out to be really difficult, so I needed help. It was marinated for about 12-13 hours. I baked the belly meat in the oven for 1 hour at 180 degrees in the oven. It turned out very aromatic, tasty and tender. The skin is dry, but you can chew it too if you wish. Belly meat has a very bright taste of spices, which makes it very, very appetizing. The dish turned out great, thank you very much!
