  1. STEP 1

    STEP 1

How to make pancakes from beef liver? Prepare your ingredients. It is advisable to take fresh beef liver; I have veal liver, it is slightly lighter than beef liver. If it was frozen, then defrost it first by transferring it from the freezer to the bottom shelf of the refrigerator.

  2. STEP 2

    STEP 2

Rinse the liver thoroughly to remove blood clots and remove films. Pour cold water over the liver and leave to soak for 15 minutes. This will relieve it of bitterness and unpleasant odor. Then drain the water and dry the liver.

  3. STEP 3

    STEP 3

Cut the prepared liver into pieces.

  4. STEP 4

    STEP 4

Place the liver in a blender bowl and pour in the milk.

  5. STEP 5

    STEP 5

Beat everything until smooth. Instead of using a blender, you can grind the liver through a meat grinder and only then combine it with milk.

  6. STEP 6

    STEP 6

Pour the liver mass into a bowl. Add eggs. Whisk everything until smooth.

  7. STEP 7

    STEP 7

Pour in the vegetable oil and whisk again until the oil is distributed throughout the mixture.

  8. STEP 8

    STEP 8

    Add flour, salt, pepper.

  9. STEP 9

    STEP 9

Mix the dough thoroughly so that there are no lumps. Leave the dough to rest for 10 minutes. If the consistency is too thin, add a little more flour.

  10. STEP 10

    STEP 10

Heat a little vegetable oil in a frying pan over moderate heat. Fry the thin pancakes for about 3 minutes on each side until golden brown.

  11. STEP 11

    STEP 11

You can serve pancakes just like that, or you can make a cake based on them, making a layer of vegetables. Bon appetit!

The question arose - what to cook from the liver? I found this recipe on the Internet. I liked beef liver pancakes for their simplicity and affordability. I used fresh beef liver and soaked it in water for half an hour. A blender was perfect for grinding, although before I used a meat grinder to grind the liver for a cake. It seems to me that it is much more convenient and faster in a blender. I also added ground nutmeg and ground sweet paprika to the liver dough, which added an incredible flavor to the beef liver pancakes. The dough stood for about 10 minutes and when frying the pancakes did not tear, I fried them for 3 minutes, as the author writes. The wonderful pancakes made from beef liver went off with a bang. The pancakes turned out very tender, juicy and thin. Even my child, who does not accept offal at all yet, ate the pancake with pleasure! Said "yum-yum"!!! And that's it!
