Batumi salad from Ivlev

Light vegetable salad with amazing Georgian dressing. A salad of tomatoes, cucumbers and bell peppers with herbs is not something special for us. A spicy dressing of walnuts and cilantro gives it a Georgian flavor.

    For the salad we need: 200 g cherry tomatoes

    Wash the cucumber, dry it and cut it into half rings.

    Peel the bell pepper from seeds and stems and cut into strips.

    Wash the cherry tomatoes, dry them and cut them in half.

    Wash the parsley, dry and finely chop.

    In a salad bowl, combine cherry tomatoes, cucumbers, bell peppers and parsley. Mix everything.

    To prepare the nut salad dressing we will need: 80 ml of water

    Peel the garlic and chop it into large pieces with a knife. You can even add whole cloves of garlic. The sauce will still be homogeneous.

    Place cilantro, walnut kernels in the bowl of a blender or food processor, add suneli hops, garlic, salt and chili pepper. Pour in water.

    Grind everything thoroughly until almost homogeneous using the knife attachment.

    Place the salad in a mound on a serving platter.

The well-known salad of tomatoes, cucumbers and bell peppers sparkled with new colors for us. The aromatic nut dressing in the Georgian style unusually transformed ordinary vegetables! My husband liked the Batumi salad from Ivlev most of all; he loves it spicy and aromatic) For the dressing, in addition to cilantro, I added dill. Before chopping, I fried the walnuts in a dry frying pan; this procedure perfectly reveals their aroma. Thanks to the dressing, the salad turned out hot and spicy. And after steeping in the refrigerator, the vegetables were even better soaked in the sauce. Thanks for the interesting idea and recipe!
