    Dough. For the dough we will need: flour, kefir (from 2.5% fat), eggs, sugar, salt and soda.

    Separate the yolks from the whites.

    Combine the yolks with half the sugar and beat until fluffy. As you beat, the mixture should lighten in color.

    Pour kefir into the beaten yolks.

    Beat everything again until smooth.

    Mix flour, sifted with salt and soda, into the yolks.

    Mix everything. You should get a semi-viscous dough.

    Separately, beat the whites with the remaining sugar into a strong, stable foam.

    Then carefully fold the whipped whites into the rest of the dough in several additions. It is better to knead the dough with a silicone spatula.

    Filling. For the filling we will need apples, raisins (I have a mixture of light and dark, you can only take one type) and ground cinnamon.

    Wash the apples, remove seeds and cut into medium pieces. Wash and dry the raisins first.

    Pour the dough into a silicone baking pan and smooth it out.
