Noodles soup
Noodle soup is most actively prepared in the countries of East and Southeast Asia, including the Russian Federation. As the name suggests, the main component of this soup is noodles. Moreover, it can be either store-bought or home-made, of different shapes, widths and lengths. It is prepared not only from wheat, but also from rice, corn, buckwheat and other types of cereals. The composition can be completely lean. In the classic form, it is customary to add an egg to the noodle dough.
The remaining products in noodle soup recipes can be anything: a variety of vegetables, meat, poultry, fish, mushrooms, herbs. The set of spices can also vary greatly from kitchen to kitchen. For example, in Russian traditional noodle soup is a soup cooked in chicken broth with the addition of homemade noodles, mixed with flour, water, salt and egg. No other ingredients may be added to it. But rarely anyone cooks it in this form. Usually the dish is supplemented with a standard soup composition: potatoes, carrots, onions, greens. Add half a boiled egg as decoration. In addition to chicken, the dish can be cooked with pork, beef or meatballs.
How to make noodles for soup? It is enough to choose any recipe you like for dough intended for cooking (this never includes yeast). The dough should roll out well and not stick to your hands. If it is too steep, the noodles will end up being rough and not very tasty. Roll out the dough into a thin layer on a work surface sprinkled with flour. Then cut into long strips with a sharp knife. There are special tools for cutting noodles that you can use.
