Asian noodle soup with pork and chicken broth
Ingredients
Step-by-step preparation
STEP 1
Any meat can be used for ramen, even fish. I had pork. It is washed thoroughly in cold water and then blotted. It is important to remove any remaining moisture, because... the meat will be fried. Well, as for cutting, I cut it into small pieces, so that it would be convenient to eat.
STEP 2
After which these slices should be seasoned with pepper, salt, spices, soy sauce and finely chopped garlic cloves and grated or finely chopped ginger. All this is added according to taste, and not strictly according to the recipe.
STEP 3
Clean small carrots should be peeled and grated.
STEP 4
A small onion is also peeled, washed, blotted and cut into very thin half rings.
STEP 5
Now you can heat the oil in a frying pan. As soon as it warms up well, send the onions and carrots here.
STEP 6
Then, when the onions and carrots are fried, add the prepared meat here. By the way, if the frying pan is large and there are not many ingredients, you can fry everything at the same time. So, fry the slices of meat, and then cook until done. Those. After frying, fill it with a small amount of water, so that it is only at the bottom, and when it evaporates, add a little more.
STEP 7
At the same time, you need to supply water for the noodles (preferably homemade, but if not, you can get by with store-bought). Cook according to instructions. Then drain the noodles in a colander. If you want to make your own noodles, then knead the dough from 3/4 cup flour, eggs, salt to taste 1 tbsp. kansui water (special mineral water), roll out a layer of dough, cut into strips and, after slightly drying, use.
STEP 8
If all the ingredients for the first Japanese dish are ready (and this means the presence of a mixture of ready-made broth with soy sauce), first put the noodles in a container, then place the meat and vegetables on it, pour the hot broth over everything. By the way, the broth can be meat, fish, chicken, etc. Sprinkle the finished dish with green onions, add halves of hard-boiled and peeled quail eggs. Season with your favorite spices one more time and enjoy!
