    How to cook goose soup? For this you will need goose, vegetables and flour with an egg. Any part of the carcass is suitable for broth. It is best to use the soup part (back, wings, legs). I had goose breast on the bone and made soup from it.

    So, rinse the meat under running water, remove any remaining feathers, if any. Wash the onions and carrots thoroughly, preferably with a brush. Place the goose and vegetables into the pan. I usually leave the onions unpeeled; the onion skins give the broth a nice yellow tint. You can pre-clean the onions and carrots. Pour cold water into a saucepan and place over high heat.

    After boiling, remove the resulting foam, add salt to the broth to taste and simmer over low heat until the meat is cooked (about an hour and a half). If your bird is domestic, it may take a little longer.

    While the broth is cooking, prepare everything else. Take an egg, a pinch of salt and half a glass of flour.

    Turn the heat under the pan to maximum, add noodles to the broth with potatoes, mix everything well. Add the meat to the pan as well. After boiling, turn down the heat again and simmer the soup for about 1 minute.

    Add the herbs and remove the pan from the heat, let it sit for about 10-15 minutes. During this time, the noodles in the soup will reach full readiness. (If you have a large cut of dough, then you should boil the noodles on the stove for at least five minutes).

Goose soup with noodles is a very tasty and satisfying dish. I would like to note that the younger the bird, the more tender and soft the meat will be. I had a pet goose. To begin with, I set the broth to boil. I put the wing and leg of a goose, carrots and onions in the peel into the pan. During the cooking process, be sure to remove the foam. When the broth was ready, I strained it through a sieve and poured it back into the pan. I removed the boiled carrots and onions; I didn’t need them. The meat was cut into medium-sized pieces. I put chopped potatoes into the strained broth. And started kneading the dough for the noodles. It's very quick and easy to do. And the noodles turn out very tasty. Mixed egg, salt and a glass of flour in a bowl. I would recommend sifting the flour to avoid any debris. I kneaded the dough, wrapped it in cling film (you can put it in a bag) and left it to rest for 10 minutes. After the time had passed, I rolled out the dough into a thin layer and cut it into thin strips with a pizza cutting roller, and then cut these strips into several pieces. The length of the noodles turned out to be about 2 centimeters. I laid out the noodles on a cutting board to let them dry a little. By this time the potatoes were cooked and I added noodles, chopped meat and salt to it. When the soup was cooked, I poured it into plates and added finely chopped green onions. The goose noodle soup was flavorful thanks to the carrots and onions. The broth is rich and transparent. I recommend this recipe to everyone. It will appeal not only to adults, but also to children.
