For a simple bread without any special pretensions you will need: kefir, flour, soda, salt. And sugar to enhance the taste, if you don't mind this product. Additional spices, seeds, grains can be added as desired. Among these: cumin, sesame, pine nuts, bran, flakes and so on. To be sure, you can add a teaspoon of baking powder to the flour.

Soda needs to be mixed with kefir - it seems to be quenched in it instead of vinegar. You will immediately feel how the structure of the drink has changed - the spoon will begin to loudly knock on the sides of the dish. In addition, kefir will increase in volume, so take this into account and pour it into a large container. By the way, in a number of recipes this procedure is skipped and soda is added separately. This doesn't mean the recipe is wrong, just the cooking technology is different.

You can use any flour of your choice: wheat, corn, rye, oatmeal, buckwheat. You can mix them in different proportions. You can also bake anywhere, even on the grill or over a fire, or at home in the oven, slow cooker, or bread maker.

When ready, the dough is kneaded by hand for five to ten minutes. To prevent the dough from sticking to your hands when processing, grease them with vegetable oil - this will not harm the dough in any way. The advantage of it being yeast-free is that you don’t have to leave it to rise. Immediately after the first kneading, you can put it in a preheated oven and bake. Standard temperature is 200C.
