If you do not have such a mode, then turn on the “Dough” mode for 10 minutes, and then “Baking” for 40 minutes. The baking mode must be selected to the minimum. When soda reacts with kefir, carbon dioxide is released. If you knead the dough for a long time, all the gas will come out and the dough will not rise well.

I baked a lot of different breads in a bread machine, but I haven’t tried yeast-free bread yet. For a change, I tried this recipe. I replaced kefir with homemade thick fermented milk, only diluting it a little with water. Everything else is according to the recipe, I just didn’t add sesame seeds. I put in all the flour at once. The mode was set to “quick baking”, the crust was medium, the weight of the loaf was 800g. My bread took 1 hour and 38 minutes to bake. As I expected, the bread did not rise much, since there is no yeast in the composition) The bread looks and tastes like a non-sweet cake. It has the same pores, is a little moist and has a faint sour milk smell. This bread cuts perfectly, you get thin flexible slices without crumbling. To my taste, they could have used more salt and some kind of strong flavor additive (garlic powder, fried onions). For yeast-free baking, the bread turned out quite fluffy. It is best used for making sandwiches.
