    How to make yeast-free bread in a bread machine? Prepare your food. Instead of wheat flour, you can use whole grain or first grade flour. Kefir is suitable for any fat content. You can use any vegetable oil. I chose Italian herbs as an additive; you can use any others or leave them out altogether.

    Take a bread maker bucket. Install the stirrer blade. Place all the ingredients in it in accordance with your model - I use bulk ingredients first. First, pour the sifted flour into the bread machine. It is important to sift the flour to saturate it with oxygen. This will make the bread more airy and rise better when baking.

    Pour kefir into a bucket, add soda.

    Place the dough on the “Kneading” program for 10 minutes (it is not recommended to knead kefir dough for a long time), add flour or kefir if necessary. Then set the “Baking” program for 1.5 hours. I advise you to keep an eye on the bread during the process, it may cook earlier. Programs for kneading dough and baking bread may differ depending on the bread machine model; follow the instructions for your specific modification.

    After the end of the program, remove the golden brown bread from the bread machine, remove the stirrer blade from it and let the bread cool. Hot bread crumbles a lot when cutting.

I really like cooking in a bread machine because it is very convenient and takes a minimal amount of active time. I knead dough in it, prepare bread and muffins. This time I wanted to make yeast-free bread in a bread machine. The dough was kneaded for about 15 minutes. The bread was baked for one hour. I didn't notice that the recipe used a small baking bowl. I have a large bowl, and the bread in it was not even, because there was not enough dough for it. The bread turned out to have a soft crumb, but quite dense. It's a little damp inside. It tastes a bit bland, but I think it would be great for a variety of brightly flavored spreads. Thanks for the recipe!

The bread turned out too sweet and dense, heavy. I took 450g of flour, the height of the bread was only 8 cm, the height of the loaf was almost equal to the height of the “bun” when kneading, i.e. the bread almost didn’t rise at all, it baked normally in 1.5 hours. It turned out quite tasty, but I would like the bread to be thicker.
