Kefir bread in a bread machine

Delicious bread with a delicate crumb and an appetizing crust. This airy bread is good on its own. And if you spread butter on it and apply a layer of jam or jam... then you may not have enough of one loaf. And I'll have to bake another one.

  1. STEP 1

    STEP 1

First, let's prepare all the necessary ingredients. Kefir should be at room temperature. If you just took it out of the refrigerator, warm it up a little in the microwave. I usually heat kefir in the “Defrost” mode. So it definitely won't curl up

  2. STEP 2

    STEP 2

Pour the heated kefir into the bucket of the bread machine. Add an egg.

  3. STEP 3

    STEP 3

Then you need to add vegetable oil and melted butter.

  4. STEP 4

    STEP 4

Then salt and sugar are sent into the bread machine bucket.

  5. STEP 5

    STEP 5

    Add sifted flour.

  6. STEP 6

    STEP 6

Make a small well and pour yeast on top. Then select the required mode. On my Redmond bread machine, I set the “White bread” mode, weight 1000 g, crust – dark.

  7. STEP 7

    STEP 7

About 10 minutes after I start kneading the dough, I usually look into the bread machine to see how the process is going. Sometimes it happens that flour remains on the walls or the dough sticks to them. Using a silicone spatula, I give the bread maker a little help. Also pay attention to the consistency of the dough. If it turns out to be very dense, then you can add a little warm kefir, and if, on the contrary, it is viscous, then flour.

  8. STEP 8

    STEP 8

After 3 hours 40 minutes, a signal sounded that the bread was ready. We take it out of the bucket. Allow time for the bread to cool. I don't recommend cutting it hot.

Everyone loves homemade bread from a bread machine. I like French best, but it is mixed with water. But I haven’t tried it with kefir before, I doubted that the dough would rise and bake. But it turned out that the recipe worked very well. The bread maker did a great job. Thanks for the recipe! The crumb turned out soft, springy, tasty. The crust is crispy. The bread did not fall off after cooling and was sliced well. The kids just ate it like a cupcake)

Thank you very much for the recipe I baked it today, it turned out very tasty. I’m just starting to get acquainted with my bread machine, can you tell me if it’s possible to replace the flour with rice, corn or rye?

I also do everything in a slightly modified composition, that is, I sprinkle 500 grams of flour, and add 100 grams of corn flour, it turns out a very aromatic, fragrant and tasty bread, try it, you won’t regret it

Sorry that I didn’t take a cut, I took a photo of the bread while it was cooling. And then, when the sample was taken, there was no time for that! I really, really liked it, thank you very much! And it rose, and it was airy, and it had a beautiful crust! simply superb bread!
