  1. STEP 1

    STEP 1

How to make flatbreads without yeast? Prepare all products. I have kefir 3.2% fat. Keep in mind that the amount of flour used will depend on the fat content of kefir: lower-fat kefir will require a little more flour than indicated. Remove the kefir from the refrigerator in advance so that it has time to warm up to room temperature.

  2. STEP 2

    STEP 2

Sift the flour to saturate it with oxygen. The quality of baking will largely depend on this. In a suitable sized bowl, combine the sifted flour, baking soda and salt. Make a depression in the middle.

  3. STEP 3

    STEP 3

Pour liquid ingredients – kefir and refined vegetable oil – into the dry ingredients. There is no need to extinguish baking soda with vinegar, since a fermented milk drink will do the job perfectly.

  4. STEP 4

    STEP 4

Knead soft dough. You may need more or less flour. It all depends on its properties and the fat content of the kefir you use. Focus on the desired consistency of the dough. It should be soft, sticky, plastic, but not tough. Cover the dough with a towel and let it rest for 20 minutes.

  5. STEP 5

    STEP 5

Divide the dough into four equal parts. From each piece, form cakes no more than 1 cm thick. Prick the surface of each piece with a fork so that they rise evenly during baking. Place on a parchment-lined baking sheet. In advance (10-15 minutes before cooking), preheat the oven to 180 degrees. Bake for about 20-25 minutes. Baking time and temperature may differ from those indicated. Focus on the features of your technology.

  6. STEP 6

    STEP 6

When the top of the baked goods is browned, check the doneness with a wooden toothpick. Prick it, if it comes out dry, it’s ready. Remove the baking sheet from the oven. Cool the tortillas completely. Serve them instead of bread with various dishes. It will be delicious with tea or coffee. Or make delicious sandwiches (like cream cheese and veggies).

I liked the option of simple flatbreads made from rye flour and those made from wheat flour are also delicious.

I found a recipe on the website that I wanted to try: flatbreads without yeast, using rye flour. I sifted the flour first. In a mixer bowl, combine flour, baking soda and salt. Added kefir, vegetable oil, mixed and kneaded the dough with a mixer using a special dough attachment. Cover the finished dough with a napkin and leave to rest for 20 minutes. Then she formed cakes from the dough, placed them on a baking sheet, pricked them with a fork and baked in the oven for 25 minutes at 180°. The result was impressive: an interesting taste and not at all difficult. I will definitely cook again. I recommend trying it and thanks to the author for the recipe 😘
