Take natural yogurt, without any additives. Low-fat sour cream or kefir is also suitable instead; you will need less kefir. You can use rice, corn, oatmeal or whole wheat flour.     Wash the zucchini, dry it, remove the skin. If the zucchini is young, you don’t have to cut it. The same applies to seeds - remove them from mature ones, leave them as they are when they are young. Grate the zucchini on a coarse grater. Add salt to the grated zucchini, stir and leave for 8-10 minutes. After the specified time, squeeze out the zucchini and drain the released liquid.

    Beat an egg into a bowl with grated zucchini and add yogurt. Salt the mass. You can also add any seasonings that you like or consider necessary.

    Start adding flour in portions, kneading the dough well after each addition. It may take more or less flour than indicated in the recipe. Look at the consistency of the dough - in the end it should become like thick sour cream.

    Preheat the waffle iron, grease its panels with a drop of vegetable oil using a pastry brush. You will only need to grease once, before the first waffle. Spoon the dough, two spoons will be enough.

    Close the lid of the device. Bake the waffle until golden brown, the time will depend on the power of the waffle iron. Remove the finished waffle to a plate. Bake waffles using all the dough this way. When hot, they are a little hard, then soften.

When the taste of zucchini pancakes in a frying pan is already familiar, you can try another cooking method, for example, in the form of zucchini waffles made from zucchini in a waffle iron. And while the season for fresh zucchini has not yet arrived, frozen zucchini has come into use. And as a waffle iron - a sandwich maker, a universal device. For 400 grams of zucchini (which was previously defrosted and from which excess liquid was drained), crushed in a blender, I added two tablespoons of rice flour and four tablespoons of whole grain flour (since the recipe says about the possibility of replacement) so that the dough becomes like thick sour cream. I added frozen dill and suneli hops. And it turned out that such waffles are baked more conveniently than pancakes in a frying pan 😅. Less greasy, more dense. At first the crust is crispy, but over time the waffles become softer, and, as already written, not a trace remains of the crust. However, the taste does not suffer from this. It's still delicious! The main thing is to mix well and bake until nicely crusty/golden. Convenient, not greasy and tasty!

Beautiful and tasty waffles. The preparation is not difficult, but there is one caveat: you need to use well-squeezed zucchini. It is best to add salt to the grated zucchini, let it sit for a while and release moisture, then squeeze well. I used very juicy country squash, so I had to use more flour and eggs, but it still turned out delicious. It goes perfectly with garlic sauce, which I prepared like this: 100 g of yogurt, 50 g of cottage cheese, 2 cloves of chopped garlic in any convenient way, 1/2 tsp mustard

Unsweetened, summery, golden, vegetable and very healthy zucchini waffles made from zucchini in a waffle iron. They can be served as a main dish or a side dish for meat or fish. This dish easily replaces zucchini pancakes. I’ll share my opinion: not everyone will like them, because after baking they turn out a little dry on top (like waffles), unlike the juicy, soft zucchini pancakes fried in a frying pan that everyone is used to. But someone will definitely like them. It is important to note that freshly prepared waffles are crispy on the outside and soft on the inside. When they lie down, not a trace of the crispy crust remains, so you need to eat them right away. And one more thing... These waffles are best served with sour cream, sour cream and garlic sauce with dill or any other sauces.
