STEP 1
How to make Viennese zucchini waffles from zucchini in a waffle iron? Prepare your food. Any zucchini will do, both young and mature; take a medium size. Take natural yogurt, without any additives. Low-fat sour cream or kefir is also suitable instead; you will need less kefir. You can use rice, corn, oatmeal or whole wheat flour. STEP 2
Wash the zucchini, dry it, remove the skin. If the zucchini is young, you don’t have to cut it. The same applies to seeds - remove them from mature ones, leave them as they are when they are young. Grate the zucchini on a coarse grater. Add salt to the grated zucchini, stir and leave for 8-10 minutes. After the specified time, squeeze out the zucchini and drain the released liquid.
STEP 3
Beat an egg into a bowl with grated zucchini and add yogurt. Salt the mass. You can also add any seasonings that you like or consider necessary.
STEP 4
Mix the ingredients until smooth.
STEP 5
Start adding flour in portions, kneading the dough well after each addition. It may take more or less flour than indicated in the recipe. Look at the consistency of the dough - in the end it should become like thick sour cream.
STEP 6
Preheat the waffle iron, grease its panels with a drop of vegetable oil using a pastry brush. You will only need to grease once, before the first waffle. Spoon the dough, two spoons will be enough.
STEP 7
Close the lid of the device. Bake the waffle until golden brown, the time will depend on the power of the waffle iron. Remove the finished waffle to a plate. Bake waffles using all the dough this way. When hot, they are a little hard, then soften.
STEP 8
Serve the PP waffles to the table. Bon appetit!
