Zucchini rolls with chicken fillet and vegetables in the oven

A delicious, healthy and beautiful dinner made from our favorite zucchini! Very tasty, tender and aromatic! It’s also beautiful and low in calories - in general, this original dish has only advantages! My husband, a huge zucchini fan, absolutely loves these rolls. Try it too! Since the dish is time-consuming, it is better to prepare it on a weekend.

    First we make the dough for zucchini pancakes. Grate the zucchini on a fine grater.

    Add eggs, mix.

    Add a spoonful of sour cream, four tablespoons of semolina, salt, spices, herbs, and garlic. Mix. Then add flour until you get a thick dough, like pancakes. Let it sit for about 15 minutes until the cereal swells.

    Now comes the hardest part - frying the zucchini pancakes. To do this, you need a small diameter pancake frying pan. Heat the frying pan, pour a little oil, put a scoop of dough and distribute it over the frying pan with a spatula. Fry over moderate heat for several minutes until the dough sets and browns.

    Carefully turn it over to the other side and fry it a little less. If you bake it too much, the pancake will not curl up. In this way, fry six pancakes. Set them aside to cool.

    Pass the chicken fillet through a meat grinder along with half an onion, add salt, pepper and mix well.

    Chop the second half of the onion and the pepper and simmer in a small amount of oil until soft.

    Now we make rolls. On the side that is more deeply fried, place the minced meat and spread it in a thin layer.

    Place the prepared rolls in a baking dish.

    Grease with a thick layer of sour cream and place in a hot oven (190 degrees) for about forty minutes.

    If desired, you can sprinkle grated cheese on top or add it to sour cream. I didn’t do this, and it turned out so delicious!
