STEP 1
I knew about this culinary recipe, which tells how to fry zucchini pancakes with semolina and potatoes in water, from my mother, like many other recipes passed down to me by inheritance. If you haven't tried this dish yet, I highly recommend it! So, we will need the products that I indicated in the ingredients field.
STEP 2
Pour semolina into a deep bowl, fill with cold water and leave to swell for thirty minutes.
STEP 3
In the meantime, grate the zucchini on a coarse grater (tear it apart, if you like the name of the dish). In the same way, rub the carrots and potatoes that have been peeled in advance. Press the garlic through a garlic press. Dry the mixture slightly to remove excess moisture.
STEP 4
Remove excess water from the bowl with the swollen semolina if there is any left there. Add grated vegetables, eggs and flour for binding,
STEP 5
Salt and pepper all this and mix well. Essentially we have a dough. Liquid, of course, and heterogeneous, but quite suitable for frying pancakes.
STEP 6
Heat vegetable oil in a frying pan. To prevent the pancakes from sticking to the bottom and spoiling, the oil must be very hot. We scoop up the dough with a tablespoon, since it is liquid, and pour it into the frying pan. Fry the pancakes first on one side until golden brown.
STEP 7
Then turn them over and fry until fully cooked. We use all the dough.
STEP 8
Remove the potato pancakes from the stove and fry the next batch. Our dish is ready. Serve warm with sour cream. Bon appetit!
