    How to fry zucchini pancakes with kefir in a frying pan? Prepare all the necessary ingredients. I took a small young zucchini weighing 300 grams, unpeeled. Wash the zucchini in running water, cut off the tail and grate on a coarse grater. Of course, it is better to take early zucchini without seeds. If you do not have a young zucchini, then peel it and remove seeds.

    Transfer the grated zucchini to a bowl. Let it lie down for a while and let out the juice; if you get a lot of juice, then squeeze out the mass and drain the juice, but not all of it.

    Beat the egg into a small deep container, add sugar and salt and mix everything well with a fork. First wash the egg with baking soda in running water, as there may be harmful bacteria on its surface.

    Pour room temperature kefir and egg mixture into a bowl with zucchini. Stir. It is convenient to do this with a silicone spatula or just a spoon.

    Pour in the flour mixed with soda, sifted through a sieve, and add chopped green onions or dill - I used onions. There is no need to extinguish the soda, as it will be extinguished by kefir. You may need a little less or more flour. Be guided by the consistency of the dough - it should be thick. When the dough is ready, you can immediately start frying the pancakes.     Pour a tablespoon of vegetable oil into a preheated frying pan, heat it a little and place a tablespoon of dough in the form of flat cakes.     Turn the pancakes over to the other side and fry for another 5 minutes. Remove the finished pancakes from the pan, add another tablespoon of oil, heat again and fry the next batch. I got 16 small-sized pancakes, these are four frying pans of 4 pieces. Each batch used 1 tablespoon of oil - quite a bit of oil, so the pancakes were not oily.

    Place the pancakes on a paper napkin, although in my case this was not necessary, since they turned out to be completely non-greasy. Serve delicious and simple zucchini pancakes with kefir warm with sour cream or any other sauce of your choice. Bon appetit!

I really love zucchini pancakes. True, I don’t always have kefir on hand, sometimes I add a couple of tablespoons of mayonnaise and the same amount of sour cream, the pancakes turn out tender and tender. I used to just cook this recipe, it also turns out delicious

I didn’t have green onions on hand, so I made it without them. This was my first time trying to bake these pancakes. Both me and my family really liked them. But they have a big drawback compared to regular, classic pancakes - they are eaten faster. Next time I’ll add onions, I think they’ll be there, it’ll be delicious too.

There are so many recipes for zucchini pancakes! It's time to try kefir pancakes. I doubled the amount of products, thanks to a convenient calculator. I took very little green onions, literally a couple of feathers. I liked the consistency of the dough; the soda was quenched with kefir and a lot of bubbles appeared. It’s funny to watch this process with a child) During frying, the pancakes behaved exactly like ordinary pancakes, as if there were no zucchini in the dough at all. In finished products, you can hardly even feel the zucchini. We ate it, dipping it in sour cream. Delicious! The pancakes turned out so tender, soft and juicy. It was also delicious in the morning, my husband even took it with him to work for a snack. Great recipe, I'll take note)
