This morning I surprised my family with zucchini pancakes in a frying pan. I grated the zucchini and squeezed out the juice, adding the eggs. Grind well with an immersion blender. Added milk, dried parsley, salt, a little sugar (to balance the taste), ground black pepper, sifted flour and mixed the dough well using a blender. I let it sit for about 20 minutes and started baking the pancakes. They were cooked well, and the parsley looked very interesting in them. Everyone liked the zucchini pancakes!
