  1. STEP 1

    STEP 1

Prepare all the ingredients listed in the recipe. Remove the butter from the refrigerator in advance so that it has time to soften. Heat the milk (not higher than 40 degrees). It should be pleasant to the touch, not scalding hot.

  2. STEP 2

    STEP 2

Combine soft butter and sugar in a bowl. Beat with a mixer at low speed or with a regular fork until smooth. If you want the baked goods to be sweeter, increase the amount of sugar to 150 grams. You can use a sweetener that is not afraid of heat treatment.

  3. STEP 3

    STEP 3

Add eggs (3 large or 4 smaller) and continue beating until smooth and even in texture.

  4. STEP 4

    STEP 4

Without stopping whisking, carefully pour in the warm milk little by little.

  5. STEP 5

    STEP 5

Add 1 tablespoon of lemon juice. Sift the flour to saturate it with oxygen. Mix part of the flour with baking powder (1 level teaspoon) and add to the milk-egg mixture. This way the baking powder will be better distributed throughout the dough. You can replace it with baking soda (1 teaspoon), quenched with 9% vinegar or lemon juice (1 tablespoon). There is no need to pre-mix it with flour.

  6. STEP 6

    STEP 6

Add flour little by little. Beat the dough until smooth. You may need more or less flour than indicated in the recipe. Everything will depend on its properties and degree of humidity. Change the amount to achieve the desired creamy consistency. Let the dough sit for 5-10 minutes to release the gluten from the flour.

  7. STEP 7

    STEP 7

Turn on the electric waffle iron to heat up.

  8. STEP 8

    STEP 8

The finished batter should be slightly thicker than for pancakes with a smooth, even texture without lumps.

  9. STEP 9

    STEP 9

Using a silicone brush, lightly grease the waffle iron with refined, high-burning vegetable oil. This way the waffles will not stick when baking. If the surface of the device is Teflon, it is not necessary to lubricate it with oil.

  10. STEP 10

    STEP 10

Using a ladle or tablespoon, pour the dough into the middle of the mold. For each waffle you need about 2 tbsp. l. test. Close the waffle iron tightly and bake. Baking time depends on the power of your appliance. It took me 5 minutes to bake. Yours may be faster or a little longer. When you open the lid of the electric waffle iron, be careful not to get burned by the steam that is generated during the baking process.

  11. STEP 11

    STEP 11

How to determine the readiness of waffles baked in an electric waffle iron? The finished baked goods will be well browned on top, fluffy, soft on the inside and crispy on the outside.

  12. STEP 12

    STEP 12

Bake the rest of the waffles in this manner until you run out of batter. Lightly grease the surface of the mold (with the exception of Teflon) each time.

  13. STEP 13

    STEP 13

Cool the finished waffles a little. Before serving, pour over chocolate sauce or sprinkle with powdered sugar through a fine strainer. It will be delicious served with honey, condensed milk, jam, syrup, melted chocolate.

  14. STEP 14

    STEP 14

Here are the finished waffles in cross-section (see photo). Garnish them with chopped walnuts, fresh raspberries, strawberries, blueberries or fruit slices. Fresh mint leaves will also come in handy.

  15. STEP 15

    STEP 15

Viennese waffles are delicious warm or cold. But in my opinion, they taste much better hot! Bon appetit!
