STEP 1
How to make Viennese strudel with apples? If you don't have ready-made stretch dough, knead it. For more details, see the steps in the recipe description. By the way, this dough can be frozen, and to create strudel, defrost for 1 hour at room temperature.

Prepare the following ingredients.

Wash the apples under running water, peel, cut into quarters and cut off the seed pods. Cut into medium-sized cubes, so during the cooking process they will not become mashed.
STEP 4
Combine raisins and chopped walnuts in a bowl, but don't turn them into dust! If you buy raisins, rinse them in running water or soak them in hot water for a few minutes, then dry them. If desired, raisins can be kept in cognac or wine.

Melt the butter in a frying pan or cauldron and place the container on the stove over medium heat. Leave a little oil to lubricate the workpiece.
STEP 6
Place the apple slices in the pan.
STEP 7
Turn the heat to medium and sprinkle the apples with granulated sugar. You can add vanilla sugar, vanilla essence or vanillin. If you add vanillin, take it at the tip of the knife, otherwise it may taste bitter in the finished dish.
STEP 8
Rinse the raisins and cover with water for 15-20 minutes, drain in a colander, and let the water drain. This will make it elastic, but do not pour boiling water on it, it may soften. Chop the walnuts with a knife, but not into crumbs. Add raisins and nuts to the apples, carefully mix the whole mass and reduce the heat. Simmer until caramelized, when the apple filling releases juice - it should thicken, mixed with granulated sugar. Add ground cinnamon and stir.
STEP 9
Meanwhile, take the stretch dough and roll it out on a lightly floured work surface. Then gently stretch it with the backs of your hands in different directions, trying not to tear it. Remove any decorations with sharp edges as they may damage the dough.
STEP 10
Sprinkle the edge of the stretch dough with breadcrumbs. Make sure that the crackers used are without the addition of various seasonings - just ground dried bread.
STEP 11
At this point the apple filling will be ready. Many people recommend pouring crackers into the frying pan into the filling, but I recommend doing it differently, pour them onto the dough.
STEP 12
Place the filling on a layer of crackers - it will absorb the juice released during baking. Carefully fold the edges of the dough over the filling and roll it up.
STEP 13
Cover a baking sheet with parchment paper, grease with vegetable oil, and place the roll on it with the seam down. Brush the top with butter.
STEP 14
Place the baking sheet in the oven, preheated to 180 C and bake the strudel for about 25-30 minutes depending on the power of your oven. As soon as its crust is properly browned, remove the baking sheet and let the roll cool slightly.
STEP 15
Sprinkle the cooled strudel with powdered sugar.
STEP 16
Carefully cut it with a sharp knife into portioned pieces, serve for dessert, not forgetting to brew real aromatic coffee or tea. You can decorate the top with a scoop of your favorite ice cream.
