  1. STEP 1

    STEP 1

How to bake cherry strudel with cherries? Prepare the necessary ingredients for the dough. Be sure to sift the flour. This will saturate it with oxygen, and the dough will turn out more tender and airy. The water should be warm.

  2. STEP 2

    STEP 2

Place the egg in a bowl and beat with a fork. For the dough you will only need half an egg. The rest will be used to grease the roll before baking.

  3. STEP 3

    STEP 3

Combine sifted flour, warm water, half a beaten egg, vegetable oil and salt. Knead into a smooth, homogeneous dough. You may need a little more or a little less flour than the specified amount.

  4. STEP 4

    STEP 4

Form the dough into a ball, wrap it in film and leave it warm for 2 hours. Be sure to rest the dough for the specified time, otherwise it will not stretch properly.

  5. STEP 5

    STEP 5

Prepare the necessary ingredients for the filling.

  6. STEP 6

    STEP 6

Place the cherries in a colander and leave to defrost. All the juice should drain from the berries, then the filling will not flow during baking.

  7. STEP 7

    STEP 7

Combine and mix sugar, ground almonds and breadcrumbs.

  8. STEP 8

    STEP 8

Turn on the oven to 180 degrees. Dust the dough with flour and first roll it out with a rolling pin. Then transfer the dough to a towel and slowly stretch it with your hands from the center to the edges, then the edges themselves. The dough should be stretched as thin as possible. If the dough breaks here and there when stretching, you can easily pinch this area. The result should be a more or less even rectangle.

  9. STEP 9

    STEP 9

Using a brush, brush the entire surface of the dough with vegetable oil.

  10. STEP 10

    STEP 10

Sprinkle the sugar-almond mixture evenly over the dough, coming within 1cm of the edges.

  11. STEP 11

    STEP 11

Scatter the cherries evenly on top.

  12. STEP 12

    STEP 12

Using a towel, carefully roll the dough into a tight log along the short edge, tucking in the side edges and carefully pinching the seams so that the filling does not leak out.a

  13. STEP 13

    STEP 13

This is what the roll should look like.

  14. STEP 14

    STEP 14

Place the strudel on a baking sheet, seam side down. Brush with the remaining beaten egg. Bake the cherry strudel for about 40 minutes at 180°C. The exact time depends on the features of your oven.

  15. STEP 15

    STEP 15

Serve the strudel with a scoop of vanilla ice cream. Bon appetit!

I made cherry strudel with cherries according to this recipe. I strictly followed the description in the recipe, since it was my first time preparing Viennese strudel. At first everything seemed very complicated, but in reality it turned out to be much simpler) Initially, on the author’s advice, I left half the egg. I kneaded the dough, combining all the products on the list. I left it for 2 hours at room temperature, as the author of the recipe recommends. For the filling, I put frozen cherries in a sieve the night before. I mixed breadcrumbs with chopped nuts and sugar, and used walnuts instead of almonds. I rolled out the dough a little, then stretched it out with my hands onto a towel. The dough turned out great, it didn’t tear and stretched well. Grease it with butter, sprinkle it with the filling mixture and arrange the cherries. I wrapped it in a roll, following the description and photo. Thank you, everything is very clear and explained in detail. There were no difficulties. Brush the roll with egg and bake for 40 minutes. I sprinkled the cooled strudel with powdered sugar and cut it into pieces perfectly. Amazing Austrian dessert! A wonderful combination of dough, cherries and nut filling. Cherry strudel is very aromatic, tasty and beautiful! Decent recipe! I will cook it again and recommend it to everyone) I liked it, it’s easy and incredibly tasty! Many thanks to the author!!!

For me, cherry strudel is associated primarily with the word “juiciness.” This is one of the few types of baked goods that pleases you with the fact that the dough is soaked in berry juice. It is the combination of a large amount of juicy cherries with thin rolled out dough, which only accentuates the cherry taste, that creates the unique charm of this Viennese dish. I’m writing this now and my mouth is literally watering. I tried store-bought strudel many times and finally the desire to make it myself flared up in me. I took frozen cherries. As far as I understand, the specialty of the dish is the thinnest rolling of the dough and a large amount of cherries. As for life hacks, I can advise you to eat the strudel not immediately after removing it from the oven, but after a few hours, then the cherry juice will saturate the layers of dough and they will become very tender, melting in your mouth. Be sure to serve with ice cream! This will create a unique combination of flavors.

Very cool recipe, I love strudels! I add cinnamon to the cherries, believe me, it’s even tastier than cinnamon with apples. By the way, I really like this apple strudel recipe.
