    How to make cherry strudel from puff pastry? Prepare your food. Rinse the frozen cherries with cool water and let the water drain. Leave it to defrost directly in a colander. Also defrost the dough first by transferring it from the freezer to the refrigerator. Frozen cherries are usually sold pitted; if you cook them from fresh ones, remove the pits. You will need soft butter at room temperature.

    Grind the nuts in a blender, but not into flour, but so that medium pieces remain. You can simply chop them with a knife. Any nuts will do, take them according to availability and taste. If the nuts are already peeled, wash them first, then blot them on a towel and lightly fry them in a dry frying pan.

    Pour crushed crackers into a deep bowl (I usually prepare them myself from buns; it’s better not to take them ready for breading; they contain yeast and salt, but they are not needed). Add chopped nuts, sugar and vanilla sugar, mix the dry mixture well. You may need to take a little more or less sugar, try the cherries, mine were not very sour.

    Lightly dust the table, dough and rolling pin with flour. Roll out the dough into a rectangular layer 0.2-0.3 cm thick. Thin enough, but still strong. Using a brush or your fingers, gently grease it with soft butter; there is no need to melt it, it will be tastier. (Puff pastry contains a lot of butter, but this thin layer is necessary, it will better hold the dry mixture).

    Stepping back a couple of centimeters from the edge, evenly sprinkle half of the dry mixture onto the dough, and then a layer of cherries. I had two layers of dough, divide the filling according to the number of plates. Then tuck the edges of the opposite sides and carefully roll the roll, being careful not to leave any air. Pinch the seam and transfer the roll to a baking tray lined with baking paper, seam side down. Prepare the second roll in the same way.

    Whisk the yolk with 1 tbsp. milk and brush the top of the rolls with this mixture. Bake the strudels in a preheated oven at 180°C for about 25-30 minutes, until golden brown. Times may vary depending on your oven.

    The roll turns out crispy at first, but quickly becomes soft. Serve it to the table, sprinkled with powdered sugar. Traditionally, strudel is served warm with a scoop of vanilla ice cream. Bon appetit!
